This rib roast recipe took years to formulate. It makes the most out of this cut of meat. It is perfect for any special occasion.

Yield 1 prime rib roast

Number Of Ingredients 8

1 (14 pound) roast-ready prime rib roast (ribs cut off and tied to roast)
¾ cup all-purpose flour
2 teaspoons freshly ground black pepper
2 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon celery seed

Steps:

  • Remove prime rib from refrigerator and allow the meat to come to room temperature, about 3 hours depending on the size of the roast.
  • Preheat oven to 425 degrees F (220 degrees C). Line a roasting pan with aluminum foil.
  • Unwrap the roast and place onto roasting pan; blot with paper towels. Sift together flour, pepper, salt, paprika, onion powder, garlic powder, and celery seed into a small bowl. Coat the roast all over with the flour mixture.
  • Roast in preheated oven until cooked to your desired degree of doneness; about 4 1/2 hours (20 minutes a pound) for medium-rare. Roast to an internal temperature of 120 degrees F (49 degrees C) for medium-rare; 130 degrees F (54 degrees C) for medium; or 140 degrees F (60 degrees C) for well done.
  • When the roast has finished cooking, take it out of the oven, and cover with aluminum foil. Allow to rest in a warm spot for 30 minutes to 1 hour before slicing.

1 bone-in beef rib roast (4 to 5 pounds)
1/4 cup kosher salt
2 tablespoons garlic powder
2 tablespoons dried rosemary, crushed
2 tablespoons wasabi powder
2 tablespoons butter, softened
1 tablespoon coarsely ground pepper
1 teaspoon herbes de Provence

Steps:

  • Preheat oven to 350°. Place roast, fat side up, on a rack in a foil-lined roasting pan. In a small bowl, mix salt, garlic powder, rosemary, wasabi powder, butter, pepper and herbes de Provence; pat onto all sides of roast., Roast 2 to 2-1/2 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well 145°). Remove roast from oven; tent with foil. Let stand 15 minutes before carving.

This is THE ONLY recipe I'll ever use for prime rib. It comes out PERFECT every single time! NO FAIL! But--you MUST NOT change the directions or the ingredients. The directions are CRUCIAL. When my husband's bosses came over from Germany, I made this for them, and they just flipped over it! The next time they came to the states, they were down in Florida at a steakhouse, and they oredered the prime rib...well...the owner of the company leaned over to my husband and said, "This isn't Kelly's"!! LOL!! When my hubby told me I just laughed! It truely is that good! You must use at least a 5 lb. roast, no smaller, but can go larger. I've cooked an 8 lb. one and it comes out the exact same. *But, don't think you can cook a 12 pounder and have it turn out! LOL Anywhere between 5-8 lbs. is the perfect window. No smaller, no larger.   • Place roasting pan over medium-high heat. Pour red wine into pan; scrape bottom with wooden spoon, scooping up crispy bits to deglaze pan. Add the drippings that have settled to the bottom of the fat separator, making sure not to add the fat. Cook until reduced by half, 5 to 8 minutes. Place a fine sieve in a medium heatproof bowl.   • Preheat oven to 500°F. Cut rib loin in half (roast halves separately for more controlled/even cooking.) Sear both halves in olive oil over very high heat until nice dark golden color. Place tricolor peppercorns into a bag, crush pepper corns with a rolling pin. Strip the leaves from the rosemary and thyme springs. Mix salt, crushed peppercorns, rosemary leaves, thyme leaves and garlic.  Pour olive oil over the rib loin and pour on the rub mix. Pat slightly to get it to stick to the meat. Roast for 20-30 minutes at 500 degrees, then reduce heat to 300°F and roast for another 20 to 30 minutes or until a meat thermometer registers 125 for rare/medium rare (roast will continue to cook slightly after removing from the oven.) NOTE: If you'd like the meat more cooked, leave it in the oven longer. Just keep an eye on the meat thermometer and don't let it cook past medium rare! **USING A MEAT THERMOMETER IS VERY IMPORTANT TO ENSURE YOU COOK THE MEAT TO YOUR LIKING*** Remove from oven and let rest at least 20 minutes before slicing.
