1 whole – 4lb. organic chicken
1 Tbsp. [b]Organic Virgin Coconut Oil Get a 15 oz. jar FREE from Thrive Market now!
1 tsp. paprika
1 1/2 cups Pacific Organic Bone Broth (Chicken)
1 tsp. dried thyme
1/4 tsp. freshly ground black pepper
2 Tbsp. lemon juice
1/2 tsp. sea salt
6 cloves garlic, peeled

Steps:

  • In a small bowl, combine paprika, thyme, salt, and pepper. Rub seasoning over outside of bird.
  • Heat oil in the pressure cooker to shimmering. Add chicken, breast side down and cook 6-7 minutes.
  • Flip the chicken and add broth, lemon juice and garlic cloves.
  • Lock pressure cooker lid and set for 25 minutes on high.
  • Let the pressure cooker release naturally.
  • Remove from pressure cooker and let stand for 5 minutes before carving.

3/4 cup dry bread crumbs
1/2 cup grated Parmesan cheese
4-1/2 teaspoons minced fresh parsley
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup butter, melted
3 tablespoons lemon juice
2 garlic cloves, minced
6 boneless skinless chicken breast halves
Dash paprika

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, salt and pepper. In another bowl, combine the butter, lemon juice and garlic. Dip chicken in butter mixture, then roll in crumbs., Roll-up chicken jelly-roll style; place seam side down in a greased 11x7-in. baking dish. Drizzle with any remaining butter mixture; sprinkle with paprika. , Bake, uncovered, at 350° for 35 minutes or until juices run clear.

This recipe was inspired by the Middle Eastern dried seasoning mix called za’atar, a combination of herbs (usually thyme, oregano and marjoram), sesame seeds and sumac, often spiked with salt. Here, fresh herbs are substituted for the dried, which, along with fresh parsley and mint and plenty of lemon and garlic, are used to marinated boneless chicken thighs. If you can’t find sumac, just leave it out. It does add a nice tang and vibrant color, but the dish will work without it. Optimum marinating time here is 8 hours. But feel free to leave it for as little as 15 minutes or as long as 24 hours. If you would rather use white meat, substitute boneless skinless breasts but reduce the cooking time by a few minutes.
