1 medium onion, cut into quarters
2 carrots, peeled and cut into 1-inch chunks
2 stalks celery, cut into 1-inch chunks
2 cloves garlic, peeled
1 cup chicken broth
2 2 pounds turkey breast halves with bone or 2, 1 1/2-pound skinless, boneless turkey breast roasts (not rolled)
1 teaspoon poultry seasoning
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons butter, melted
¼ cup all-purpose flour

Steps:

  • In a 6 to 8-quart electric pressure cooker place the onion, carrots, celery, and garlic, Add chicken broth. Top with turkey. Season with poultry seasoning, salt, and pepper. Drizzle with butter.
  • Lock lid in place. Set cooker on high pressure to cook for 25 minutes for bone-in turkey, 20 minutes for boneless. Quickly release pressure. Open lid carefully.
  • Check turkey with an instant-read thermometer in the thickest part of the breast; it should register at least 165°F. (If desired, for bone-in turkey, preheat broiler. Place turkey in a shallow baking pan. Broil 5 inches from the heat for 1 to 2 minutes or until skin is browned.) Remove turkey to a platter; cover and let stand 10 minutes.
  • Meanwhile, use a slotted spoon to remove vegetables to platter with turkey. Transfer liquid to a measuring cup; measure 1 1/2 cups liquid. Return to cooker. In a small bowl whisk together 1/2 cup cold water and 1/4 cup flour. Add to liquid in cooker. Turn cooker to saute setting and cook and stir until thickened. Season to taste with salt and pepper. Serve gravy with turkey and vegetables.

4-5 pounds whole turkey breast, (bone-in)
1-2 tablespoons olive oil
1/2 tablespoon poultry seasoning, or italian seasoning
2 teaspoons lawry's seasoned salt
1 cup chicken broth, or turkey broth (or stock)

Steps:

  • Loosen the skin on the turkey breast and rub the olive oil underneath and on top of the turkey breast. Sprinkle the turkey breast with the poultry or Italian seasoning and seasoned salt.  Pour the stock into the pressure cooker.  Place the turkey breast inside the pressure cooker with the cavity side down.  Place the lid on the pressure cooker, seal and lock. Set the cook timer to the pressure cooker setting on high for 30 minutes. When the pressure cooker beeps, switch the valve so that the pressure slowly releases. Once released, open the lid carefully, away from your face. Remove the turkey from the pressure cooker. Test the turkey breast with a digital thermometer to be sure meat has reached at least 160°F. Set on a cutting board and let cool. For crispy skin, place the turkey breast on a baking sheet and in the broiler for about 5 to 10 minutes. Slice turkey and place on a platter before serving.

  • Rub salt, rosemary, pepper, lemon zest, and garlic all over turkey breast. Allow breast to come to room temperature before cooking. Turn on Sauté mode of pressure cooker on Normal mode. When it reads HOT, add oil. Sear turkey breast on all sides until golden brown, 3 to 4 minutes per side. Press Cancel. Transfer turkey to a holding plate.  Add stock, carrot, celery, and onion to the pressure cooker and use a wooden spoon to scrape up any browned bits that are stuck to the pot. Place trivet over stock mixture, and place turkey breast on the trivet.  Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 32 minutes on High Pressure. A thermometer inserted in the thickest part should read at least 165 degrees F (75 degrees C). (See below for formula to determine cook time based on turkey's weight.) Allow pressure to naturally release. Transfer turkey to a holding plate and remove trivet. Stir cornstarch and water together in a bowl until no lumps remain.  Press Sauté button on Normal and bring mixture to a boil. Blend vegetables and stock in the pressure cooker using an immersion blender until smooth. Add cornstarch mixture and cook, whisking occasionally, until gravy thickens, 4 to 5 minutes. It will continue to thicken as it cools. Season gravy with salt and pepper to taste. Serve turkey with gravy.
