The Instant Pot makes it possible to get dinner on the table in less than 30 minutes, even if you are cooking split chicken breasts.

2 pounds bone-in chicken breasts (2 to 3 split chicken breasts)
Kosher salt (to taste)
Ground black pepper (to taste)
Seasoning blend (to taste)
1 cup chicken stock

Steps:

  • Pat the chicken with paper towels to dry.
  • Sprinkle the chicken breasts with kosher salt, pepper, and a seasoning blend (e.g., Cajun or Creole, taco seasoning, Za'atar, herbes de Provence, etc).
  • Place the trivet in the Instant Pot and add 1 cup of chicken stock (you may use water, if desired).
  • Lock the lid in place and turn the valve to the sealing position. Select pressure cook (or manual), high pressure, and set the time for 10 minutes.
  • When the time is up, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to the venting position to release the remaining pressure.
  • Meanwhile, preheat the broiler and line a baking pan with foil.
  • Place the cooked chicken on the prepared baking pan, skin side up.
  • Broil the chicken breasts for 4 to 6 minutes, or until the skin is browned.
  • If your chicken pieces are either very large or quite small, you might have to adjust the cooking time. To be sure the chicken is thoroughly cooked, use an instant-read thermometer. The minimum safe temperature for poultry is 165 F. If using frozen split chicken breasts, pressure cook for 25 minutes.

2 bone-in, skin-on chicken breasts (about 2 pounds total)
1 tablespoon Cajun seasoning, or more to taste
salt and freshly ground black pepper to taste
1 cup chicken broth

Steps:

  • Sprinkle chicken breasts with Cajun seasoning, salt, and pepper.
  • Place a trivet in a multi-functional pressure cooker (such as Instant Pot®). Pour in chicken broth and add chicken breasts. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place cooked chicken breasts on a baking sheet and broil until skin is nicely browned, about 4 minutes.
