2 cups uncooked instant long-grain rice (such as Uncle Ben's®)
1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)
1?¾ cups water, or more as needed
1 large onion, chopped
1 small green bell pepper, chopped
¼ cup salsa
1?½ teaspoons garlic powder
½ teaspoon chili powder, or to taste
salt and pepper to taste

Steps:

  • Combine rice, diced tomatoes, water, onion, green bell pepper, salsa, garlic powder, chili powder, salt, and pepper in a multi-functional pressure cooker. Close and lock the lid. Select the Rice function according to manufacturer's instructions; cook until rice is tender and flavors are blended, about 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

This Instant Pot Spanish Rice is a fantastic side dish for both Mexican and Spanish main dishes. The rice, beans, tomatoes, and bell peppers mingle with aromatic spices to form a dish that is a treat for your taste buds.

Number Of Ingredients 15

1 cup water
1 1/2 cups white rice
1 14.5 oz canned diced tomatoes (in their juices)
1 can black beans (drained and rinsed)
1 can corn (rinsed)
1 small onion (diced)
2 cloves garlic (minced)
2 tsp Spanish paprika
2 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/4 tsp ground black pepper
1 red bell pepper (chopped)
1/4 cup cilantro, chopped ((optional))
lime wedges (for garnish)

Steps:

  • Add all ingredients, except bell pepper and cilantro to the Instant Pot
  • Place lid on Instant Pot and make set the valve to sealing. Press the pressure cook button and set the time to 5 minutes (on high pressure).
  • When cooking is done, allow a natural pressure release for 10-15 minutes, then you can release the remaining pressure.
  • Add bell pepper and stir. Keep on warm for 5 minutes before serving. Garnish with cilantro and lime wedges, if desired.
