Used in place of rice, it has become a popular substitute. It is very versatile, as it will take on the flavors of whatever it accompanies. Use this recipe and your MultiPot Pressure Cooker for perfectly tender quinoa every time. For variety, feel free to substitute the water with the same amount of other liquids. Low-sodium chicken broth, mushroom broth or vegetable broth all work well.

- Pour quinoa and water into inner steel pot of pressure cooker; season with salt. Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Pressure Cook (Manual) and cook for 1 minute on High pressure. Let pressure release naturally for 10 minutes, then turn steam vent handle to Venting to quick-release remaining pressure.

It pairs perfectly with grilled chicken, roast pork, or seared fish. If you love the tangy zing from fresh lime, you can boost that flavor even more by grating fresh lime zest over the quinoa just before serving.

- Heat oil in pressure cooker set to Sauté on Normal. Cook and stir onion and garlic in hot oil until browned, 10 to 13 minutes. Stir quinoa, cilantro, and salt with the onion mixture. Pour vegetable broth and 1 tablespoon lime juice into the cooker. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 1 minute on High pressure. Once the cooking cycle has completed allow pressure to release naturally for 10 minutes, then set steam vent to Venting to quick-release remaining pressure. Fluff quinoa with a fork. Stir fresh cilantro through the quinoa; season with additional lime juice, salt, and pepper to serve.
