1 tablespoon olive oil
1 yellow onion
1 pound lean ground beef
1 (1-ounce) Hidden Valley® Original Ranch® Dips Mix
7 ounces green chiles
1 cup canned tomatoes
2 pounds Velveeta cheese

Steps:

  • Turn pressure cooker on the sauté setting and wait until it is hot.
  • Add the olive oil, onion, ground beef, ranch dips mix, green chiles and tomatoes. Cook, while crumbling the beef, until browned.
  • Add the cheese over the top of the meat mixture in the pot. Do not stir it in. Place lid on and seal the top.
  • Cook on manual pressure high for 4 minutes. When ready, do a quick release. Stir contents of pot and serve immediately with chips or vegetables.

8 ounces Oaxaca cheese, shredded
4 ounces heavy cream
½ (8 ounce) package Neufchatel cheese
1 (4 ounce) can chopped green chiles
1 tablespoon finely chopped pickled jalapeno pepper
1?½ teaspoons pickled jalapeno pepper juice

Steps:

  • Select Slow Cooker setting on a multi-functional pressure cooker (such as Instant Pot®); set temperature to High. Add Oaxaca cheese, heavy cream, and Neufchatel cheese. Stir until melted, 3 to 5 minutes. Reduce temperature to Low. Let queso cook for 5 to 7 minutes more. Pour in green chiles, jalapenos peppers, and pickling juice. Mix well.
