all-purpose flour
butter
chicken breasts
garlic powder
half-and-half
mushrooms
yellow onion

Steps:

  • Melt the butter in an electric pressure cooker turned to the sauté mode. Add diced yellow onions and sauté, stirring occasionally, until golden brown, for about 3-4 minutes. Stir in minced garlic and sauté for a further 30 seconds, stirring occasionally.
  • Pour in the chicken broth, then season with garlic powder, salt, and black pepper. Stir well. Add chicken. Mix well.
  • Cover the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.

1 teaspoon extra virgin olive oil
2 garlic cloves, thinly sliced
1 1/2 cups prepared marinara sauce
3 tablespoons grated parmesan cheese
Freshly ground black pepper
4 thin chicken breast of cutlets (12-16 ounces total)
1/2 teaspoon salt, or more to taste
1/2 teaspoon dried oregano
4 ounces fresh mozzarella cheese, grated
I bunch broccolini
Optional: Chopped basil, for garnish

Steps:

  • Heat olive oil in inner steel pot of pressure cooker set to Sauté on Normal. Add garlic and cook until just turning golden, about 1 minute. Stir marinara sauce, 2 tablespoons Parmesan cheese, and black pepper into garlic. Press Cancel.  Season chicken with salt, oregano, and black pepper. Nestle chicken into sauce, then spoon sauce over the chicken to cover. Place trivet over chicken in the pressure cooker and place broccolini onto trivet.  Lock pressure cooker lid into place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 3 minutes on Low Pressure. Set steam vent handle to Venting to quick-release pressure. Remove trivet with broccolini and set aside.  Sprinkle mozzarella cheese and the remaining 1 tablespoon Parmesan cheese evenly over the chicken. Cover the pot with the lid (but don't lock it on) and let sit until cheese is melted, 4 to 5 minutes. Transfer chicken and sauce to serving plates and place broccolini next to chicken. Sprinkle basil over chicken.

  • Dice the chicken. Cut the top off of the pepper, then remove the seeds and clean out the inside. Place the chicken into a small mixing bowl. Put 6 oz of the shredded mozzarella cheese to the bowl along with 1 cup of marinara sauce. Add the seasonings to the bowl and combine it all thoroughly. Spoon the chicken mixture into the hollowed out peppers. If your peppers are all the same size about a third of the chicken mixture will go into each pepper. Once you have filled the peppers with the chicken mixture, sprinkle the remaining shredded mozzarella on top of the peppers. Place the cover onto the pot and close to seal. Set the pressure cooker to cook on manual high pressure for 12 minutes. Once the cooking cycle has finished allow the pressure to release naturally for 10 minutes. Remove the peppers from the pot. Serve the peppers immediately with pepper to taste.
