This is one of the most popular Power Pressure Cooker XL chicken recipes, as it takes two simple items and combines them for a very filling meal tatn most of the family should love.

Number Of Ingredients 11

3 boneless skinless chicken breasts
Ground black pepper
1 ¼ cup of chicken broth
2 carrots, (diced)
1 tsp of paprika
1 tsp of dried oregano
2 cloves of garlic, (minced)
1 cup of white rice
Kosher salt
1 tbsp of extra Virgin olive oil
1 red bell pepper, (chopped)

Steps:

  • Set your pressure cooker to sauté. Add in the oil and onion and allow the onion to cook for three or four minutes, until it is soft.
  • Add in oregano, garlic, and paprika and cook for about a minute, until they become fragrant.
  • Add in rice and broth and then salt and pepper to season. Stir these into your pressure cooker. Add in chicken, carrots, and bell peppers. Mix and season with salt and pepper generously.
  • Close the lid on your pressure cooker and set to pressure cook. Cook for 8 minutes on high. After the food is done cooking, allow the pot to naturally decompress for about 10 minutes before relieving the pressure. Then, take off the lid and shred the chicken.

brown sugar
butter
chicken broth
chicken drumsticks
garlic
honey
molasses

Steps:

  • In a large mixing bowl, combine all ingredients, except butter and chicken drumsticks. Whisk until molasses and brown sugar dissolve and set aside.
  • Melt the butter in a 6-quart (6 L) pressure cooker turned to the sauté mode Season chicken with salt and black pepper. Working in batches, brown seasoned chicken drumsticks, turning occasionally, for about 5 minutes, transferring the first batch to a serving platter.
  • Return all cooked drumsticks to the pressure cooker. Pour the broth mixture over. Toss well to coat.
  • Close the pot and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 18 minutes.
  • Unlock the pressure cooker and open it, using a Quick Release method. Using tongs, transfer chicken drumsticks to a serving platter.
  • Switch setting to the sauté mode and bring remaining sauce to a simmer. Cook, stirring, until the liquid in the pot has reduced to a syrupy glaze, for 1-3 minutes. Pour glazed sauce over chicken drumsticks. Serve hot.
