75 g good sourdough bread
160 g raw peeled king prawns, from sustainable sources
½ x 460 g jar of roasted red peppers
3 cloves of garlic
½ a bunch of flat-leaf parsley (15g)
1 lemon
olive oil
1 x 400 g tin of quality cherry tomatoes
20 g feta cheese
extra virgin olive oil

Steps:

  • Preheat the grill to high. Slice the bread 1cm thick, then cut into 3cm chunks and place in a large bowl with the prawns. Drain the peppers, slice 3cm thick lengthways, and add to the bowl. Peel the garlic. Finely chop 1 clove and add to the bowl, then finely slice the other 2 and put aside. Finely chop the parsley, stalks and all, and add to the mix. Finely grate in the lemon zest, squeeze in half the juice, add 1 tablespoon of olive oil and a pinch of black pepper and mix well. Take pride in skewering up the prawns and bread on 2 skewers, interlacing with the peppers, and don’t pack it all on too tightly. Sit each skewer across a roasting tray and grill for 6 to 8 minutes, turning halfway – keep an eye on them! Meanwhile, put a non-stick frying pan on a medium heat with ½ a tablespoon of olive oil and the sliced garlic. Stir regularly for 2 minutes, or until lightly golden, then pour in the tinned tomatoes to bubble away until the skewers are ready, squashing a few with the back of your spoon. Add a squeeze of lemon juice, then season the sauce to perfection. Serve the kebabs on top of the sauce, sprinkled with feta and black pepper, then finish with 1 teaspoon of extra virgin olive oil.

Steps:

  • 1. whisk together the oil lime juice ginger and garlic. Add the sugar chilli powder chopped coriander,soy sauce, salt and pepper. Stir well.
  • 2.take 8 bamboo skewers, thread 4 prawns on each and lay them in a dish.
  • 3. pour the marinade over the prawns, cover and put in fridge for 1 to 2 hours, turning occasionally.
  • 4. heat the grill and brush the rack with oil. Put the kebabs on the rack and grill them for 2-3 minutes until they turn pink. Turn them and do the same for the other side.
  • 5. put the kebabs on a plate and serve with lime wedges on the side and last squeeze of lime on the top.

    1. First up, if you’re using wooden skewers, soak some in cold water for 10 minutes, so they don't burn when you put them on the barbie later.
    2. Finely grate the zest of 1 lemon into a large bowl, then squeeze in its juice. Peel the garlic and pound into a rough paste in a pestle and mortar with a pinch of sea salt and black pepper. Tear in half of the parsley leaves, smash together, then add to the bowl with 1 tablespoon of oil.
    3. Pull the heads off the prawns and peel off the shells, leaving the tails intact. Run the tip of your knife down their backs and pull out the vein to butterfly them. Toss the prawns in the marinade, then cover and pop in the fridge for 30 minutes.
    4. For the salad, squeeze the remaining lemon juice onto a serving platter and add 2 tablespoons of extra virgin olive oil. Finely slice and add as much chilli as you like, then tear over the remaining parsley and mint leaves. Peel and very finely slice the red onion, then toss into the dressing and herbs on the platter.
    5. Chop the top and bottom off the watermelon, then sit it on one of the flat sides and slice off the peel. Chop the flesh into 1½cm-wide strips, then into 1cm dice, discarding the seeds, and add to the platter.
    6. Chop the cucumber and feta into 1cm chunks and add to the party, then use your fingertips to gently toss it all together.
    7. Take a bit of pride in skewering up the prawns, interlacing them with the pancetta as you go – don’t pack it on too tightly.
    8. Cook the skewers on the barbecue for about 3 minutes on each side, or until the bacon is crisp and the prawns are pink, then serve on top of the salad.
