3 eggs, separated
3 tablespoons butter, melted
1-1/2 cups all-purpose flour
1/2 to 1 cup chopped pecans
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1-2/3 cups buttermilk

Steps:

  • In a large bowl, beat egg yolks and butter. Combine the flour, pecans, sugar, baking powder, baking soda and salt; add to the egg mixture alternately with buttermilk. Beat egg whites until stiff peaks form; fold into batter. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown.

3/4 cup firmly packed brown sugar
1 tablespoon cornstarch
1/4 cup Land O Lakes® Butter
1/2 cup chopped pecans
1 cup milk *
1/4 cup dark corn syrup
1/2 teaspoon vanilla
Ice cream, sliced fresh fruit, pancakes or waffles

Steps:

  • Combine brown sugar and cornstarch in small bowl; set aside.
  • Melt butter in 2-quart saucepan until sizzling; add pecans. Cook over medium heat, stirring occasionally, 3-4 minutes or until pecans are toasted. Add milk, syrup and brown sugar mixture. Continue cooking, stirring constantly, 5-8 minutes or until mixture comes to a boil and thickens. Remove from heat; stir in vanilla.
  • Serve warm over ice cream, sliced fresh fruit, pancakes or waffles.
