APPLE CINNAMON MUFFINS - PRAIRIE FARMS DAIRY



Apple Cinnamon Muffins - Prairie Farms Dairy image

Number Of Ingredients 13

2 Cups All-Purpose Flour, + 2 tsp
1 1/2 tsp baking powder
1/2 tsp salt
2 1/2 tsp ground cinnamon (divided)
2 Cups apples (peeled & diced)
1/2 Cup Prairie Farms butter (softened)
1 Cup sugar
2 eggs
2 tsp vanilla extract
1/2 Cup Prairie Farms milk
5 Tbsp Prairie Farms butter (melted)
1/4 Cup sugar
1 Tbsp ground cinnamon

Steps:

  • Preheat oven to 375°F. Prepare muffin tins with flour and butter, discarding excess flour or use muffin tin liners. Set aside.
  • In a medium bowl, sift together 2 cups flour, baking powder, salt, and 2 teaspoons cinnamon. Set aside.
  • In a small bowl, mix 2 teaspoons flour with ½ tsp cinnamon. Sprinkle over diced apples in a separate bowl, stir to coat and set aside.
  • In a large bowl using a mixer, cream together butter and sugar until lightened in color. Add eggs one at a time, fully incorporating before adding the next. Mix in vanilla extract.
  • Alternating between flour mixture and milk, stir in ingredients until combined. Fold in diced apples, careful not to overmix. Scoop mixture into prepared muffin tin, about ¾ full. Bake 16-20 minutes, until tester comes out clean.
  • To make topping, melt butter in a small bowl. In separate small bowl whisk together sugar and cinnamon. Dip or brush the top of muffins with butter, then dip in cinnamon sugar. Place onto cooling rack and enjoy!

Number Of Ingredients 13

1 Cup all-purpose flour
1 tsp baking powder
1/2 tsp kosher salt
1/8 tsp baking soda
1 egg
2 1/2 Tbsp brown sugar
2 1/2 Tbsp sugar
1/4 Cup Prairie Farms whole milk
1/4 Cup Prairie Farms sour cream
1 Tbsp Prairie Farms unsalted butter (melted)
1 Tbsp vegetable oil
1 tsp vanilla extract
2 Tbsp Cinnamon Sugar

Steps:

  • Preheat oven to 400°F and grease a mini muffin pan.
  • In a medium bowl, whisk together flour, baking powder, salt and baking soda. In a small bowl, whisk together the remaining ingredients.
  • Pour wet ingredients into dry ingredients and fold until just combined. Put batter into piping bag and pipe batter into pan, filling each about ¾ full.
  • Bake for 8 to 10 minutes, until tops are just dry and bottoms are lightly golden. Remove from pan and place on cooling rack.
  • While muffins are still warm, role to coat in cinnamon sugar. Enjoy immediately or store in an air tight container 3-4 days.
