This was a much requested recipe of my mother's. Now that mom is no longer with us, we have this often in her honor.

Yield 8 to 10 servings

Number Of Ingredients 11

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon pepper
⅛ teaspoon dried dill weed
1 ½ cups shredded Cheddar cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
  • Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

This should be a dessert. It is so good! The crunchiness of walnuts and the fruity taste of raisins complement this traditional holiday dish.

Number Of Ingredients 7

6 large sweet potatoes
1 (15 ounce) can apricot halves
4 apple - peeled, cored and sliced
½ cup packed brown sugar
½ cup chopped walnuts
½ cup raisins
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C)
  • In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.
  • In a large casserole dish, mix potatoes and apples. Dot with butter. Sprinkle brown sugar, walnuts, and raisins on top of potato mixture. Pour apricots over top.
  • Bake uncovered for 30 minutes.

Pour milk over all., Cover and bake at 350° for 50-60 minutes or until potatoes are nearly tender. Sprinkle with remaining cheeses.
