M5 Spice Rub, divided

2 tbsp.

chopped fresh flat-leaf parsley

Sour cream, for serving

Steps:

  • 1. Preheat oven to 425°F. Grease a 12-inch cast-iron pan with butter. Cut each potato crosswise into 1/8-inch-thick slices without cutting all the way through to bottom and leaving about 1/4 inch of potato intact (this will help them hold together). Arrange potatoes in pan 1 inch apart. Brush with 2 1/2 tablespoons butter. Sprinkle with 1 teaspoon spice rub. 2. Cover pan with aluminum foil and bake 30 minutes. Remove foil and drizzle potatoes (which should have opened up slightly) with remaining 2 1/2 tablespoons butter and 1 teaspoon spice rub. Bake, uncovered, until potatoes are crispy on edges and soft in the middle, 15 to 20 minutes. Garnish with parsley. Serve with sour cream alongside.

Number Of Ingredients 12

6 tablespoons of olive oil, divided
¼ cup of tomato paste
2 of medium red bell peppers, stemmed, seeded, and chopped
4 of lime zest strips, 2-inch strips
4 of cloves garlic
½ teaspoon of onion powder
¼ teaspoon of cayenne
2 tablespoons of lime juice
1 of pound mixed marble potatoes, halved
14 of ounces wild shrimp, peeled, deveined, and butterflied
1 teaspoon of lime zest for garnish
of Salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Heat ¼ cup oil in a cast iron skillet. Add tomato paste and cook down until caramelized, 5-6 minutes. Add peppers, zest strips, and garlic and sweat until peppers are soft, 10-12 minutes. Add onion powder and cayenne and cook until fragrant, 2 minutes. Season with salt and pepper and cool slightly.
  • Transfer the mixture to a high-speed blender. While the motor is running, add remaining oil and lime juice. 
  • Toss potatoes with ½ of the red pepper sauce in a separate bowl and transfer to a skillet. Roast in the oven until potatoes are crispy, 20-25 minutes.
  • Toss the shrimp with the remaining sauce. Once the potatoes are done, push the potatoes to one side of the pan and lay the shrimp evenly on the other side. 
  • Change the oven setting to broil on high. Add the pan back in the oven and cook until the shrimp is cooked through, 4-5 minutes*.
  • Garnish with lime zest and serve.
