Ingredients

3/4 cup powdered nondairy creamer
1-3/4 cups water
3 tablespoons butter
3 tablespoons all-purpose flour
2 tablespoons dried minced onion
1 teaspoon salt
3/4 teaspoon paprika
6 large potatoes, peeled and thinly sliced
2 cups diced fully cooked ham
1 cup shredded cheddar cheese

Steps:

Preheat oven to 350°. In a small bowl, mix creamer and water until smooth. In a small saucepan, heat butter over medium heat. Stir in flour, onion, salt and paprika until smooth; gradually add creamer mixture. Bring to a boil; cook and stir 1-2 minutes or until thickened., In a greased 13x9-in. baking dish, layer potatoes and ham; pour sauce over top. Bake, covered, 15 minutes. Uncover; bake until potatoes are tender, 40-50 minutes longer. Sprinkle with cheese; bake until edges are bubbly and cheese is melted, 5-10 minutes.

Ingredients

1 cup sour cream
1 can gluten free cream of chicken soup (or cream of mushroom)
2 cups shredded cheddar cheese, divided in half
1/4 cup chopped green onion
3 lbs. frozen hashbrowns

Steps:

Preheat oven to 375F. Grease a 9 x 13 pan; set aside.
In a large mixing bowl, combine sour cream, gluten free cream of chicken soup, 1 cup cheddar cheese, and green onion.
Add the frozen hashbrowns and mix until combined.
Spread mixture evenly into the pan.
Top with remaining cheddar cheese.
Bake for 35-40 minutes or until cooked through and the cheese on top is melted.
Serve hot.
