6 cups cubed peeled potatoes
5 cups water
2 cups chopped onions
1/2 cup chopped celery
1/2 cup thinly sliced carrots
1/4 cup butter, cubed
4 teaspoons chicken bouillon granules or 2 vegetable bouillon cubes
2 teaspoons salt
1/4 teaspoon pepper
1 can (12 ounces) evaporated milk
3 tablespoons minced fresh parsley
Minced chives, optional

Steps:

  • In a 5-qt. slow cooker, combine the first nine ingredients. Cover and cook on low for 7-8 hours or until the vegetables are tender. , Add milk and parsley. Cover and cook 30 minutes longer or until heated through. Garnish with chives if desired.

Number Of Ingredients 10

6 pieces Medium-sized Potato Medium in size
6 pieces Medium-sized Carrot Medium in size
3 bulbs Medium-sized Onion Medium in size
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1 teaspoon Salt Level
4 tablespoons Olive Oil
5 cups Water
2 cubes Vegetable Stock
¾ cup Green Lentil Soup/Broth Mix

Steps:

  • Peel & finely chop onions.
  • Put onions in pan w/ olive oil, simmer for ~15-20 minutes.
  • Skin and chop carrots into cubes.
  • Skin and chop potatoes into cubes.
  • Crumble 2 vegetable stock cubes into pot of boiling water. Stir until dissolved.
  • Add carrots, potatoes, lentils and stock to pot with onions. Bring to boil.
  • Once boiling, turn down and simmer for 25-30 mins.
  • Add salt, basil & oregano, simmer for 5 mins.
  • Blend until smooth.
