Wanted to find a way to use leftover mashed potatoes, read a few recipes and then made this one up. It was delicious!

Number Of Ingredients 7

1 cup leftover mashed potatoes
2 tablespoons butter or 2 tablespoons margarine, divided
1/4 teaspoon minced garlic
1/2 teaspoon dried onion flakes
1/4 teaspoon dried chives
1/4 teaspoon dried parsley
1/2 teaspoon seasoning salt

Steps:

  • If mashed potatoes are cold, warm in microwave to soften.
  • Mix thoroughly all ingredients except for 1 tablespoon butter.
  • Heat reserved butter in skillet over medium heat.
  • Drop mixture by 1/4 cupfuls into skillet, flatten slightly, and fry until browned on both sides, turning once.

6 medium potatoes, cleaned and peeled
¼ cup plus 1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon white pepper
1 tablespoon vegetable oil
½ cup water
1 egg white
Additional vegetable oil

Steps:

  • Cut potatoes into quarters; place in a medium saucepan with water to cover. Bring to a boil, and cook 10 minutes. Drain and cool; set aside.
  • Combine flour, salt, pepper, 1 tablespoon oil, and water, and set aside.
  • Beat egg white (at room temperature) until stiff but not dry; gently fold into flour mixture. Add potatoes, a few at a time, stirring gently to coat well. Drop each coated potato quarter into deep hot oil (375°). Fry until golden, turning once. Drain on paper towels. Serve immediately.

Line a large baking sheet with paper towel and set aside. Before moving onto the next step, coat clean hands with cooking spray or a thin layer of vegetable oil, to keep the batter from sticking. The batter will be a bit thin and runny, but spoon a small amount (about 1-2 teaspoons) into your hand, place a cube of cheese in the center, and top with another small spoonful of batter. Drop balls of batter into hot oil to fry, turning over at least once during cooking to ensure even browning on all sides. When fritters are dark golden brown, remove from pot and transfer to the paper towel-lined pan to drain. Let cool at least 5 minutes before serving.
