Creamy potato and egg soup. Comforting on a cold day or night by the fire. My mother made this often for our family growing up. My husband and I love it as comfort food.

1/2 cup chopped celery
1/2 cup chopped onion
4 tablespoons butter or 4 tablespoons margarine
4 cups water
4 cups peeled and chopped potatoes
3 hard-boiled eggs
2 (12 ounce) cans evaporated milk
salt
pepper
butter or margarine

Steps:

  • Cook onion and celery in butter til tender, not brown.
  • Add water, potatoes and eggs, in shell and washed, and cook until potatoes are tender (about 10-12 minutes).
  • Peel and chop eggs.
  • Put back in with potates.
  • Add evaporated milk, salt, pepper.
  • Put little bit of butter on top of soup in bowl.

2 large baking potatoes, peeled and cut into 1 inch pieces
1 large onion, coarsely chopped
1 cube chicken bouillon
1 tablespoon margarine
3 eggs, beaten

Steps:

  • Place the potatoes, onion, margarine and bouillon cube into a soup pot, and fill with enough water to cover the potatoes by 1 to 2 inches. Bring to a boil, and cook for 30 minutes, until potatoes are falling apart. You can smash them up a little if you prefer the texture. Drizzle the beaten eggs into the pot, while stirring constantly. Continue to cook and stir for about 2 minutes, until the eggs are completely cooked in long strands.

POTATO SOUP WITH DUMPLINGS | JUST A PINCH RECIPES
I adopted this recipe found on the site. It is very similar to the one my mother always made. I added more celery, potatoes and onions to better reflect my Mom's original recipe. I have always served this with her dumplings. They are added to the soup after it cooked and cooked for an additional 10-12 minutes with lid on pot until they are done. My whole family loves this dish and I make it more in the cold months. Usually starting with Halloween after my kids-and then grand-kids returned from trick or treating. I would make potato soup one year and the next, a big "caldron" of chili with corn bread. :) I will also include my Mom's recipe for her dumplings with this. When I saw this recipe with the "adopt" tag on it, I just had to make it my own. Hope you all enjoy this as much as our family has enjoyed it throughout the years. I will add pictures of my soup when I make it again!
