3 -4 lbs chuck roast
salt
pepper
3 tablespoons flour
2 tablespoons olive oil
1 medium onion, coarsely chopped
1 (14 1/2 ounce) can diced tomatoes, with juices
1/2 cup port wine or 1/2 cup red wine
2 tablespoons red wine vinegar
3 garlic cloves, finely minced

Steps:

  • Sprinkle roast with salt and pepper; coat with flour.
  • In a large skillet heat olive oil over medium-hight heat.
  • Sear roast on all sides, 2-3 minutes per side.
  • Transfer to slow cooker.
  • Add onions to pan and cook until browned.
  • Add remaining ingredients to onions.
  • Cook, stirring until mixture is simmering.
  • Pour over roast; cover and cook on high 1 hour.
  • Taste broth and adjust with salt and pepper if needed.
  • Reduce heat to low and cook 8-10 hours longer (or continue cooking on high 4-5 hours).
  • Transfer roast to a serving platter an d cover to keep warm.
  • Pour juices in a saucepan and simmer about 10 minutes to reduce excess liquid, if desired.

I love the convenience of the slow cooker but I do not care for the sodium content by using cream of mushroom soup etc. Sadly many of today's recipes call for the can of soup. I have tried many recipes over the years and adjusted them and this is the result. Please do use the wine, most of the alcohol dissipates with the cooking.

2 tablespoons Montreal steak seasoning
1 tablespoon salt
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 (2 1/2 pound) beef roast, or more to taste
1 (1 ounce) packet dry au jus mix
1 (1 ounce) package French onion soup mix
1 cup water
1 cup Malbec red wine

Steps:

  • Combine steak seasoning, salt, thyme, and rosemary together in a bowl; rub onto the roast.
  • Heat a large skillet over medium-high heat and place roast in skillet; cook until roast is browned on all sides, about 10 minutes.
  • Place the roast in the slow cooker and add au jus mix and onion soup mix. Pour water and Malbec over roast.
  • Cook on High for 5 hours (or cook in Low for 8 to 9 hours).

This is not exactly the same as perhaps the most precious recipe in my repertoire, My Mother’s Praised Chicken, which found a home in my eighth book, Kitchen, but it owes a lot to it. A family favorite, it’s a simple one-pot dish which brings comfort and joy, and it is my pleasure to share that with you. It’s not in the spirit of things to be utterly speci?c with this kind of cooking: if you’re feeding small children, for example, you may not want to add the red pepper ?akes. Similarly, you may want to use just one lemon, rather than the two I like. Your chicken may weigh more or less: the ones I get tend to be around 3½ pounds. And although I have speci?ed the Dutch oven I always use, you obviously will use the one you have, which will make a difference to how quickly everything cooks, how much evaporation there will be, and so on. Don’t let these things trouble you unduly; this is a very forgiving dish. It doesn’t rely on precision timing: the chicken, leeks, and carrots are meant to be soft, and I even like it when the orzo is cooked far beyond the timing speci?ed on the package. It’s also open to variation, owing to what’s in your kitchen. I could go on, but there is no need to add complications: this is a simple recipe that brings deep contentment.

  • Place a dish by the Dutch oven, and then pull the chicken gently apart with a couple of forks, removing any bones and skin that come loose to the dish. (For me, these bits are a particular treat: I live for the cartilage.) I find it easiest to do this while the chicken’s still in the pot but, if you prefer, you can try and remove it to a cutting board; go carefully as it’s likely to fall to pieces a bit as you do so. Stir the chicken and orzo again and ladle into bowls, sprinkling with parsley as you go. You may also want to offer Parmesan to grate over: I prefer it without, but there is a strong pro-Parmesan contingent in my house.
