What's the saying about a watched pot? If you don't feel like waiting for water to boil, here is your solution for perfectly cooked al dente pasta, ready in no time.

Total Time 25 minutes

Cook Time 5 minutes

Yield 4 to 6 servings

Steps:

  • Combine 1 pound penne, 4 cups water and 2 teaspoons kosher salt in an Instant Pot® multi-cooker. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 5 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. There is no need to drain the pasta, but you can stir in 1 tablespoon butter or olive oil to keep it from sticking.

One Pot Rasta Pasta (JJ Style)
2 tablespoons avocado oil
1 head broccoli, cut into medium florets
3 mini sweet bell peppers, rough chopped
Kosher salt
8 cups chicken stock
2 cups heavy cream
1 teaspoon jerk seasoning
1 pound bowtie or farfalle pasta
2 cups sliced baby bella mushrooms
1 roma tomato, diced
½ cup grated parmesan cheese
Re pepper flakes for garnish optional
Chopped scallions for garnish optional

Steps:

  • Heat a large 14 inch saute pan with olive oil over medium to medium-high heat. Add the broccoli florets and peppers and season with kosher salt to taste. Cook for about 6-7 minutes until the broccoli chars and softens. Remove to a bowl. Add the chicken stock, heavy cream, jerk seasoning, and season with a little bit of salt and pepper to taste. Bring to a light simmer. Add the raw farfalle pasta and stir making sure it's coated in the liquid. Add the mushrooms, broccoli, peppers, and stir into the pasta. Bring back up to a simmer over medium to medium-high heat and continue to cook the pasta until just al dente and the vegetables are tender about 8-10 minutes. The starch from the pasta will help create a thick delicious sauce. Stir the tomato and parmesan cheese into the pasta. Season with salt and pepper to taste, if needed. Garnish with red pepper flakes and scallions optional and serve right away.
