1 kg stale bread
1 1/2 kg ripe tomatoes
4 cloves garlic
1/4 cup olive oil
salt

Steps:

  • Cut the bread into very small pieces.
  • Peel the tomatoes by putting tomatoes in boiling water for five minutes then removing and plunging into cold water.
  • Put sliced garlic and the rest of ingredients in a bowl, mash together until it holds together, adding the olive oil gradually.
  • Refrigerate until well chilled.
  • Serve as tapas with chopped hard-boiled eggs or green peppers if you like.

300g (2 1/4 cups) flour
5g (1 tsp) dry baker's yeast
10g (2 tsp) fine salt
300 ml (1 1/4 cups) water
frying oil

Steps:

  • In a large bowl combine flour, salt, and yeast, then add to it water and mix to incorporate. Cover with cling film, and let rest for 45 minutes.
  • Place the dough into a pastry bag. Heat the oil until hot, then pipe little wheels directly into the oil.
  • Fry on both sides until golden brown, then transfer to paper towels to drain.
  • Cut into pieces and serve hot.
