This is a really quick meal to prepare and very tasty. Pork tenderloin medallions are sauteed and topped with a thickened fresh peach sauce consisting of garlic, sage and chicken broth.

1 tablespoon oil
1 lb pork tenderloin, cut into 1/4 " slices
salt and black pepper
1 tablespoon butter
1 minced garlic clove
1/4 teaspoon dried sage
1 (14 ounce) can chicken broth
1 tablespoon cornstarch
4 peaches, pitted and sliced into wedges

Steps:

  • Heat oil on medium high heat and saute pork slices lightly seasoned with salt and pepper for about 2 minutes on each side.
  • Remove pork to plate, cover and keep warm.
  • Add butter, garlic and sage to pan and cook until garlic is soft.
  • Mix cornstarch and chicken broth and add to pan.
  • Cook over high heat stirring constantly until sauce is thickened.
  • Add peach slices and cook just until heated.
  • Arrange pork on plate with peaches and serve with sauce.

A sweet-and-savory peach glaze caramelizes on the pork as it cooks to perfection in a grill pan. We tent the pork loosely with foil during the cooking process to hold in more heat so that the meat gets done in a flash; cutting the tenderloin in half crosswise also helps it cook faster and makes turning it frequently more manageable. Be prepared to scrub your grill pan clean, as the glaze will leave behind some char; we suggest using an outdoor grill brush on it. If you have your outdoor grill cranked up, by all means toss the tenderloin on it.

Cooking spray
1 tablespoon olive oil
1 (1-lb.) pork tenderloin, trimmed and cut in half crosswise
3 tablespoons peach preserves
1 tablespoon reduced-sodium soy sauce
1 1/2 teaspoons white wine vinegar
1 garlic clove, grated
1/2 teaspoon sea salt or flaked salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat a grill pan over medium-high. Coat pan with cooking spray. Rub oil over pork. Add pork to pan; loosely tent pork with foil. Grill 10 minutes, turning occasionally. While pork cooks, combine peach preserves, soy sauce, vinegar, and garlic in a microwave-safe bowl. Microwave at HIGH 30 seconds or until preserves melt. Grill pork 6 minutes more, or until thermometer registers 145°F, turning and brushing frequently with peach glaze. Remove pork from pan; let stand 3 minutes. Cut pork crosswise into slices. Sprinkle evenly with salt and pepper.
