1 teaspoon salt
1/2 teaspoon pepper
6 slices pork loin (can use pork chops)
1 (10 3/4 ounce) can cream of mushroom soup
2/3 cup chicken broth
1/2 teaspoon ginger
8 ounces sour cream, divided
1 (2 7/8 ounce) can French-fried onions, divided

Steps:

  • Combine flour, salt and pepper in a shallow bowl; dredge pork chops.
  • Heat oil in a large skillet; cook pork loin slices for 4-5 minutes per side or until browned.
  • Place in a single layer in an ungreased 13 x 9 x 2 pan. Combine soup, broth, ginger and 4 ounces sour cream; pour over pork.
  • Sprinkle with half of the onions.
  • Cover and bake at 350 degrees for 45-50 minutes.
  • Stir remaining sour cream into sauce.
  • Top pork with remaining onions.
  • Return to the oven; uncovered, for 10 minutes.

This layered casserole is a hearty, satisfying meal. It's full of melted mozzarella, pork loin, bacon, and mushrooms. It has just the right amount of cheese and meat. You could say it’s an all in one casserole… and one casserole for all.

Number Of Ingredients 13

For the meat: 2 pounds of pork loin, cut into 8 slices
salt
pepper
1½ cups of low moisture mozzarella, grated For the bacon and mushroom mixture: 2 tablespoons of vegetable oil
5 ounces of bacon, cut into lardons
1 onion, diced
2 fresh chilis, chopped
5 ounces of brown mushrooms, chopped
1 cup heavy cream
1 tablespoon turmeric
salt
pepper
¼ cup fresh parsley, chopped

Steps:

  • For the meat: Place 4 slices of pork loin into a 9-inch long oval baking dish. Season with salt and pepper, then evenly spread half a cup of grated mozzarella over it. Set it aside.
  • For the bacon and mushroom mixture: Heat the oil in a skillet over medium heat, then add the bacon. Stir until it starts changing color.
  • Add the onion. Cook and stir until tender. Add the chili and brown mushrooms. Cook and stir for 1 minute or so.
  • Add the heavy cream, turmeric, and parsley. Season with salt and pepper, stir and simmer for 5-6 minutes. Remove from heat.
  • Layer 1/2 of the bacon-veggie mixture into the pork and mozzarella baking dish, add the other 4 pork slices and season with salt and pepper.
  • Layer the with another half of cup of mozzarella, add the remaining bacon-veggie mixture, and top with the remaining mozzarella. Bake for 50 minutes at 370°F/185°C.

My mom has been making this since I was a kid. She says she made it up with ingredients on hand. To me it is one of my favorite comfort foods! I adjusted the number of servings based on other comments and the fact that we usually at best serve 4 with it! I will also add as one reviewer noted, the amounts for celery, peas, onion are what my mom used. I often am pretty liberal with all of those.

  • Preheat the oven to 150°C, fan 140°C, gas 2. Heat half the olive oil in a medium non-stick saucepan. Dust the pork with the flour. Add half the pork to the pan and brown on all sides. Remove to a plate. Repeat with the rest of the pork and set aside.

    Add the remaining olive oil to the pan, along with the onion, carrots and celery and cook, stirring occasionally, for about 10 minutes, until the onion has softened slightly. Return the meat to the pan with the garlic, tomatoes, bay leaf and thyme leaves. Make up 500ml stock using the stock cube and pour 300ml into the pan (save the rest for another recipe). Bring to the boil, then carefully pour the contents of the pan into an ovenproof casserole. Cover with a lid then transfer to the oven and cook for 2 hours.

    Just before serving, remove the casserole from the oven, sprinkle with the grated parmesan and bake until the cheese has melted.
