1 tbsp. sunflower oil
1 peeled and chopped large onion
1 tsp grated root ginger
2 peeled and crushed garlic cloves
2 tbsp curry paste
900 g cubed pork fillet
400 g (canned) chopped tomatoes
150 ml or vegetable pork stock
or lemon juice Squeeze of lime
salt
freshly ground black pepper
to garnish coriander leaves

Steps:

  • Heat the oil in a large deep frying pan and fry the onion for 5 mins. Add the ginger and garlic and fry for a further 5 minutes.
  • Stir in the curry paste and cook for 1 minute then add the pork and fry over a medium heat, stirring for 2 to 3 minutes, until no longer pink.
  • Add the chopped tomatoes and stock and bring to the boil. Reduce the heat to a simmer and cook for 20 to 25 minutes until the pork is tender and cooked through, stirring occasionally.
  • Add the lime or lemon juice and season to taste with salt and freshly ground black pepper. Serve garnished with coriander leaves.

  • Pour off all but 2 tablespoons of the fat in the skillet.     1. In a large heavy pot over high heat add olive oil and onion. Cook 3-5 minutes, or until onions are translucent.
    2. Lower heat to medium-high, add garlic and ginger. Cook, stirring constantly for 1 minute. 
    3. Add curry powder, stirring into onion mixture for 15 seconds. 
    4. Add diced tomatoes, coconut milk and chicken stock stirring mixture until well incorporated. Continue to heat mixture over medium-high heat until ready to add pork.
    5. Cut pork roast into 1 inch pieces. In a large skillet over high heat, add 1 tbsp olive oil. Add cubed pork, working in batches if pan is too small. Sear pork on all sides, approximately 1-3 minutes. 
    6. Add seared pork to pot with curry mixture and reduce heat to low. Cover and simmer for 30-45 minutes, or until internal temperature of pork has reached 160°F.
    7. Serve spooned over a bowl of basmati rice, topped with fresh cilantro and a squeeze of lime.
