The apple and onion together work magic on this classic dish. This is traditionally served on New Year's Day in Central Pennsylvania. It is customarily served with mashed potatoes. The sauerkraut mixture tops the mashed potatoes like a gravy. Surprisingly good.

6 thick-cut pork chops
4 tart apples, peeled and sliced
1 large onion, sliced
water to cover
1 quart sauerkraut
½ teaspoon fennel seed, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Brown pork chops in hot skillet, 2 to 3 minutes per side. Drain.
  • Arrange apples and onion in the bottom of a slow cooker; top with browned pork chops. Pour in enough water to cover bottom of the slow cooker crock.
  • Cook on High for 3 hours (or on Low for 6 hours). Add sauerkraut and fennel seed to pork chop mixture. Cook for 1 more hour.

Apples, sauerkraut, and sweet potatoes bring some sweet and savory flavors to these slow-cooked pork chops, a great dinner dish that comes together easily.

Number Of Ingredients 9

4 (1 inch thick), boneless pork chops
2 medium peeled and sliced ½ inch thick sweet potatoes
1 medium sliced onion
2 peeled, cored and sliced apples
1 tbsp brown sugar
½ tsp ground nutmeg
¼ tsp salt
to taste freshly ground black pepper
16 oz drained Sauerkraut

Steps:

  • Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
  • Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices.
  • Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut.
  • Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
  • Serve pork and vegetables with juice from the slow cooker spooned over them.
