Very Delicious!!! Recently I read on Facebook where our friend Tom wrote "I love you Wendy for your pork chop casserole." I immediately thought that I must get this recipe if he said it is that good!!! His wife, Wendy, was so nice to give me the recipe and I go directly by it without any changes! Easy to prepare.

Ingredients

2 -3 pork chops
salt and pepper
1 tablespoon olive oil
1 cup rice (instant..not regular)
1 cup hot water
1 (10 ounce) cream of mushroom soup
1/2 teaspoon salt

Steps:

Add salt and pepper to each pork chop.
Brown both sides of pork chops in the olive oil on medium heat.
Place the instant rice, hot water, cream of mushroom soup and salt in a 2 quart casserole dish.
Place pork chops on top and cover dish with aluminum foil.
Bale in a 375 degree oven for 45 minutes.

Super simple and very tasty. I got this recipe from my husband's cousin years ago and it has remained a favorite even with my children who don't care for pork. The onion soup adds a wonderful flavoring.

Ingredients

2 cups rice (Uncooked)
2 1/2 cups water
1/2 cup margarine (Cut into 4 or 5 chunks)
1 package dry onion soup mix
4 -8 center-cut pork chops (I vary number depending on how many I'm feeding)

Steps:

Brown pork chops in frying pan, if desired.
(This would be for the appearance of the pork chops only. It does not alter the taste of the recipe.) Place rice in 9 x 13 roasting pan.
Add water, onion soup mix and combine with rice.
Place the 4 or 5 chunks of margarine on top of rice.
Place pork chops on top.
Cover casserole with foil and bake at 350 degrees for 1 hour.

1. Start by prepping all your veg: peel and finely chop the onions, garlic and carrots, trim and finely slice the celery, then peel, deseed and finely chop the squash. Finely slice the bacon.
2. Heat the oil in a very large casserole pan over a medium-low heat, add the bacon, followed by the onion, garlic, carrot, celery and squash and cook gently for about 15 minutes, or until soft.
3. Add the mince, breaking it up with a spoon, and cook for about 10 minutes.
4. Turn the heat up, pour in the wine and leave to bubble and cook away for a few minutes, then tip in the tomatoes and 2 tins' worth of water. Drop in the rosemary sprigs and bay leaf, and season with sea salt and black pepper.
5. Bring to the boil, then cover and simmer for 1½ hours. After this time, if the ragù is still quite liquidy, remove the lid, turn the heat up and simmer for a few more minutes, or until thickened and reduced.
6. Eat straight away, or if you’re making this ahead of time, allow to cool, then divide between containers or plastic freezer bags.
