Try this bite-sized, grill-friendly barbecue pork appetizer plus creamy dipping sauce, sure to be gone in a flash. It’ll work indoors on the broiler, too.

Number Of Ingredients 9

1 pork tenderloin (3/4 to 1 lb)
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon packed brown sugar
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (cayenne)
1/2 cup mayonnaise or salad dressing
1/2 teaspoon ground mustard
1 medium green onion, finely chopped (1 tablespoon)

Steps:

  • Cut pork into 32 (1-inch) pieces; place in medium bowl. In small bowl, mix chili powder, cumin, brown sugar, garlic powder and red pepper. Reserve 2 teaspoons spice mixture; sprinkle remaining mixture over pork pieces; stir to coat completely. Let stand 15 minutes.
  • In small bowl, mix mayonnaise, mustard, reserved 2 teaspoons spice mixture and the onion; set aside.
  • Heat gas or charcoal grill. Spray grill basket (grill “wok’) with cooking spray. Spoon pork into basket.
  • Place basket on grill. Cover grill; cook over medium heat 10 to 12 minutes, shaking basket or stirring pork once or twice, until pork is no longer pink in center. Serve with toothpicks and mayonnaise mixture for dipping.

They have just enough heat to get your attention, but not so much that you grab for the water. So yummy. Either way, you’re in for a tasty treat, and with that great sauce, and crunch, you won’t believe that they were baked. So, you ready… Let’s get into the kitchen.

PLAN/PURCHASE
AWESOME SAUCE
4 tablespoon(s) tamari sauce
2 tablespoon(s) fresh clover honey
1 1/2 tablespoon(s) hot sauce, i prefer, frank’s
2 teaspoon(s) dark sesame oil
1 pinch(es) crushed red pepper flakes
2 clove(s) cloves, minced
THE SLURRY
1 teaspoon(s) arrowroot powder, or cornstarch
1 tablespoon(s) water
THE PORK BITES
10 ounce(s) pork tenderloin, cut into bite-size cubes
1/2 cup(s) flour all purpose variety
2 large eggs
2 tablespoon(s) water
1 cup(s) panko breadcrumbs
1 teaspoon(s) black pepper, freshly ground
OPTIONAL ADDITIONS
- toasted sesame seeds, for garnish
- sliced green onions, for garnish
- white rice, for plating

Steps:

  • PREP/PREPARE
  • AWESOME SAUCE
  • Gather your ingredients.
  • Add all of the sauce ingredients to a small saucepan, over medium-low heat.
  • Stir the mixture, and bring it up to a light simmer.
  • To make the slurry, mix the arrowroot (or cornstarch), and water together in a small bowl.
  • Add the slurry to the saucepan, and simmer for an additional 5 minutes.
  • Cover the saucepan, and then reduce the heat enough to just keep the sauce warm.
  • Chef’s Tip: If your stovetop has a warm setting, use it.
  • THE PORK BITES
  • Gather your ingredients.
  • Combine the flour and pepper in a large plate, or breading pan. Whisk the eggs with the 2 tablespoons of water, and place in another pan. Add the breadcrumbs to a third pan.
  • Coat a piece of pork in the flour.
  • Shake off the excess, and then coat in the egg wash.
  • Shake off the excess, and then press into the panko breadcrumbs.
  • Place on a parchment-lined baking sheet, fitted with a wire rack.
  • Repeat for the remaining pork, and allow them to rest for 15 minutes.
  • Place a rack in the middle position, and preheat the oven to385f (195c).
  • Place the pork bites in the preheated oven, and allow them to bake until fully cooked and beginning to brown, about 25 to 30 minutes.
  • Chef’s Note: Keep an eye on them, and make sure they don’t turn from golden brown to burnt brown.
  • Remove from the oven, and toss with the sauce.
  • PLATE/PRESENT
  • Serve on a bed of rice for a nice light meal.
  • Pile on a plate, and serve as an appetizer.
  • Garnish with some sliced green onions, and toasted sesame seeds. Enjoy.
