pork belly 400g, skin on
onion ½, finely sliced
ginger thumb-sized piece, peeled and cut into matchsticks
garlic 3 cloves, finely sliced
red chilli 1 large, roughly chopped
carrot 1, finely sliced on the diagonal (optional)
celery 2 sticks with leaves attached, finely sliced on the diagonal (optional)
coriander leaves, shredded spring onions and shredded red chilli, to garnish (see tip above)
vegetable oil 1 tbsp
star anise 2
cinnamon stick 1
cloves 2
white peppercorns 1 tsp
bay leaves 3
fresh chicken stock 2 litres
light soy sauce 1 tbsp
sesame oil 1 tsp
caster sugar ½ tsp
whole black peppercorns ground to make ½ tsp
chilli bean sauce 1 tbsp
rice vinegar 2 tsp
hoisin sauce 1 tbsp
light soy sauce 1 tbsp
shaoxing rice wine 4 tbsp

Steps:

  • For the poaching liquid, toast the whole spices in a dry pan over a medium heat for 1-2 minutes or until fragrant. Pour over the stock, season with 1 tsp of sea salt and bring to the boil. Carefully lower in the pork belly, reduce the heat to low-medium and simmer for 45 minutes-1 hour 30 minutes or until the pork is very tender. Remove the pork from the stock to a shallow bowl using tongs, leave to cool completely, cover and chill for at least 1 hour or overnight. Discard the liquid.
  • Once chilled, the pork belly will be easy to slice thinly without breaking apart. Cut into 6-8mm slices, transfer to a large bowl and gently massage the marinade ingredients into the pork. Mix together the sauce ingredients in a small bowl.
  • Set up a ‘wok clock’ (see intro) to prepare for stir-frying: put the pork on a plate at 12 o’clock followed by the onion, ginger, garlic, chilli, carrot and celery (if using), the sauce and garnishes.
  • Heat the vegetable oil in a wok over a medium-high heat until smoking hot, then add the pork a slice at a time so each one sears well (be careful, it will spit). Once golden brown on one side, turn the slices to brown on the other sides. Turn up the heat to high, add the onions and start to fold them through the pork. Stir-fry for 30 seconds-1 minute.
  • Follow the wok clock around, adding the ginger, garlic and chillies with 30-second intervals of stir-frying between each addition. Add the carrot and celery, if using, and stir-fry for a further minute. Ensuring the wok is still smoking hot, pour the sauce around the edge. Bring to a vigorous boil and stir well. When the sauce has caramelised around the meat and veg, serve garnished with coriander leaves, spring onions and chilli.

It's simple to make and the Chinese cabbage gives it a lovely depth. Make a double batch and keep the leftovers for breakfast, lunch or another dinner.

  • 1. Stock: Place the chicken carcasses into a large saucepan and cover with about three litres of water. Bring to a boil and skim off any scum that forms at the surface. Simmer, covered, over very low heat (it should be barely simmering) for about four hours. Drain and reserve the stock.

    2. In a large pot, heat the vegetable oil and fry the pork belly until lightly browned. Season with salt and stir in the Chinese cabbage. Cover and cook for about 5 minutes.

    3. Add the reserved stock, soy sauce and mirin and bring to a simmer. Simmer for about 20 minutes, add the spring onions and simmer for a further 20 minutes until the pork and Chinese cabbage are tender.

    4. Add the pak choy and enoki mushrooms and cook for a further five minutes until they are tender.

    5. Check the seasoning, adding more salt if necessary, and stir through the white pepper.

    ADAM'S TIP

    Making stock can take time, but if you want to speed up the process, use a pressure cooker. They can shave hours off the cooking time.

    My go-to stock is just chicken bones and water – that's it. The stock is the foundation on which the rest of the soup is built. Just add a few carefully selected ingredients and a nutritious dinner is ready in no time. Slow-cooking the bones for your stock releases natural gelatin, which gives the soup a luxurious mouth-feel without the need for lots of fat or starch. You could also use pork bones or fish bones or a combination of any of them. Just cook them low and slow so that the stock doesn't become cloudy.
