- Preheat oven to 350°. Season pork liberally with salt and pepper. In a large dutch oven over medium-high heat, heat oil. Add pork and sear on all sides until golden all over, about 8 minutes. Set aside. Add butter and let melt. Add onion and apples and cook until starting to soften, about 4 minutes. Stir in sauerkraut, brown sugar, beer, and caraway seeds. Bring mixture to a simmer then place seared pork on top. Cover pot then transfer to oven and bake until pork reaches internal temperature of 160°, about 45 minutes.

This recipe came from my aunt who is an awesome cook, just like my mom. It's a great way to prepare a cheaper cut of meat and still have something that's tasty and tender. - When the hocks are mostly tender, remove the casserole from the oven. Place the sausages on top of the sauerkraut. If the liquid has reduced to less than 2/3, add a bit more water. Cover the casserole and return it to the oven. Cook for about 30 minutes, or until the sausages are tender and heated through. Add the pork chops and press them into the sauerkraut. Cover and return to the oven and cook until pork chops are heated through and tender, about 30 minutes longer. Remove the casserole from the oven and discard the bouquet garni. Serve immediately, with each person receiving some of each of the sausages, part of a hock, part of a pork chop and some of the sauerkraut. Pass the mustard at the table.

- This can also be roasted in the oven, in a covered roasting pan. Set the oven temperature to 350º and roast for about 2 hours. Add the sauerkraut and other ingredients, lower the oven temperature to about 300º, and roast for an additional 1 to 1-1/2 hours. This is also a good crockpot meal. Just add all the ingredients at once and cook on the low setting for about 7 hours.
