TOP SECRET RECIPES | POPEYES SPICY MAYONNAISE
The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is crazy good, but with spicy mayonnaise, that sandwich is great. You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp. POPEYES CAJUN SPARKLE RECIPE | TOP SECRET RECIPES
At these New Orleans-inspired quick-chicken restaurants portable paper pouches of this seasoning blend hold about 1/4 teaspoon of tasty sprinkle, and Popeyes doesn't sell it in stores. The only way you'll get a decent portion to use on your home foods is to either horde dozens of envelopes of the Cajun seasoning or whip up your own home version. I recommend the latter. One secret ingredient in this basic seasoning blend is MSG, or monosodium glutamate, which is an important part of the delicious flavor. You'll find MSG near the other herbs and spices in your market under the brand-name Accent. If you don't want MSG on your food you can certainly leave this ingredient out of the mix. You won't get the best Top Secret clone, but the blend will still be very good on anything that needs a dash of salt, flavor, and a little bit of spicy heat. - Preheat air fryer to 400°. Pound chicken breasts with a meat mallet to 1/2-in. thickness. Cut into 1-in. wide strips., In a shallow bowl, whisk buttermilk and pepper. Place flour in a separate shallow bowl. Mix corn chips and taco seasoning in a third bowl. Dip chicken in flour to coat both sides; shake off excess. Dip in buttermilk mixture, then in corn chip mixture, patting to help coating adhere., In batches, arrange chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until coating is golden brown and chicken is no longer pink, 7-8 minutes on each side. Repeat with remaining chicken. Serve with ranch dip or salsa.
