1 Chicken Breast
1 1/2 teaspoon Salt
1 cup Buttermilk
1 cup All-Purpose Flour
1/2 teaspoon Dried Thyme
2 teaspoon Paprika
1/2 teaspoon Ground Ginger
1 teaspoon Garlic Salt
1/2 teaspoon Dried Basil
1/3 teaspoon Dried Oregano
1/2 teaspoon Celery Salt
1/2 teaspoon Dry Mustard
1/2 teaspoon Ground White Pepper
as needed Vegetable Oil

Steps:

  • Cut Chicken Breast (1) into 1-centimeter pieces, about the size of a piece of popcorn. Transfer to a bowl.
  • Season chicken with Salt (1/2 teaspoon) and pour Buttermilk (1 cup) over top. Refrigerate for 1 hour.
  • Into a baking dish, add All-Purpose Flour (1 cup), Dried Thyme (1/2 teaspoon), Paprika (2 teaspoon), Ground Ginger (1/2 teaspoon), Garlic Salt (1 teaspoon), Dried Basil (1/2 teaspoon), Dried Oregano (1/3 teaspoon), Celery Salt (1/2 teaspoon), Dry Mustard (1/2 teaspoon), and Ground White Pepper (1/2 teaspoon), and Salt (1 teaspoon). Mix well.
  • Coat chicken pieces in the flour and spice mixture.
  • Heat Vegetable Oil (as needed) to 350 degrees F (180 degrees C) and fry chicken for 6-7 minutes, or until golden brown. Drain finished pieces on a paper towel.
  • Serve and enjoy!

2 large skinless chicken breasts
4 slices of 400g wholemeal bread
1 teaspoon oregano
1 teaspoon chilli powder
1 teaspoon ground sage
1 teaspoon basil
1 teaspoon pepper
2 teaspoons salt
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon garlic salt
1 eggs

Steps:

  • Preheat oven to 190 degrees.
  • Blitz the bread until fine breadcrumbs in a blender.
  • Cut the chicken breasts into small popcorn chicken sized pieces.
  • Mix the breadcrumbs and the herbs and spices to make the coating.
  • Crack the eggs into a separate bowl and mix together. The chicken needs to be dipped in the egg and then to the breadcrumb mixture and repeated to get an even coating.
  • Bake for 25 mins or until the chicken is cooked through.
  • Serve with SW chips, syn free coleslaw
