Marshmallow Popcorn Balls | Better Homes & Gardens image

Using marshmallows and melted butter instead of corn syrup in this popcorn ball recipe means you don't have to fuss with a candy thermometer--and your end product has a chewier, more manageable texture.

14 cups popped popcorn
¼ cup butter
1 10 ounce package marshmallows
½ - 1 teaspoon flaked sea salt
Red Food Coloring
Red sprinkles

Steps:

  • Preheat oven to 300°F. Remove any unpopped kernels from popcorn. Place popcorn in a shallow baking pan or roasting pan; keep warm in oven.
  • In an 8-quart pot heat butter over medium-low heat until melted. Add marshmallows. Cook, stirring frequently, until melted. Stir in sea salt and a few drops red food coloring until light pink.
  • Add popcorn to marshmallow mixture; stir gently to coat. Let cool until easy to handle. With buttered hands, quickly shape mixture into twelve 3-inch-diameter balls. Add sprinkles to coat. If desired, sprinkle with additional sea salt. Let stand until cool. Wrap each in plastic wrap. Store in an airtight container at room temperature up to 2 days or freeze up to 3 months.

I made these with my grandmother for years. They are soft and delicious- and NOT made with marshmallow fluff! If using bag popcorn- make sure it is not buttered and use 2-3 bags.

Yield 20 balls

Number Of Ingredients 7

2 -3 cups popcorn
2 cups sugar
1 cup white Karo
1 cup water
1/2 cup butter
3/4 teaspoon salt
3/4 teaspoon vanilla

Steps:

  • Heat popcorn in oven at 300 degrees.
  • Stir and cook sugar, karo, water, butter and salt until sugar is dissolved.
  • Continue cooking WITHOUT stirring until mixture reaches 270 degrees on candy thermometer, (can use a kitchen thermometer) or until syrup forms a soft ball in cold water.
  • Add vanilla and pour slowly over popcorn.
  • Mix well.
  • Dip hands in water and form balls.
  • Wrap in plastic wrap and enjoy!

When I was little I had problem with my teeth, and I loved popcorn balls but they were to hard for me to eat. So my mom started making them with marshmallows. They stay soft and chewy, plus they taste better. BEWARE!!!!!!!!!!Very addictive. My children get upset because I hide them,,,I'm a baaadd.. girl LOL Even being a diabetic I can have butter rather than margarine. Plus I control my sugar intake.
