6 boneless skinless chicken breast halves (about 1-1/2 pounds total)
1/3 cup cornmeal
0.5 (1 1/4 ounce) package taco seasoning mix (2 tablespoons)
1 egg
2 (4 ounce) cans diced green chili peppers
2 ounces monterey jack cheese, cut into six 2x1/2-inch sticks
2 tablespoons snipped fresh cilantro or 2 tablespoons fresh parsley
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1 (8 ounce) jar taco sauce or 1 (8 ounce) jar salsa
fresh cilantro stem (optional)

Steps:

  • Place each chicken breast half between 2 pieces of plastic wrap. Pound lightly into a rectangle about 1/8 inch thick. Remove plastic wrap.
  • In a bowl combine cornmeal and taco seasoning mix. Place egg in another bowl; beat lightly.
  • For each roll, place a spoonful of chili pepper half on a chicken piece. Place a cheese stick atop chili pepper near an edge. Sprinkle with some of the cilantro or parsley, black pepper, and red pepper. Fold in sides; roll up jelly-roll style, starting from edge with cheese .
  • Dip rolls into egg and coat with cornmeal mixture.
  • Place rolls, seam sides down, in a shallow baking pan.
  • Bake, uncovered, in a 375 degree F oven for 25 to 30 minutes.
  • Serve with taco sauce or salsa. If desired, garnish with cilantro sprigs.
  • Goes great with Zatarains Yellow Rice!

1 cup finely chopped fresh poblano chile peppers (about 2) (see Tip)
? cup finely chopped onion
½ cup finely chopped celery (1 stalk)
1 teaspoon olive oil
2 tablespoons snipped fresh parsley
? teaspoon Cajun seasoning
? teaspoon dried oregano, crushed
4 medium skinless, boneless chicken breast halves (about 1 1/2 pounds total)
¼ cup cornmeal
½ teaspoon Cajun seasoning
2 egg whites
½ cup shredded Monterey Jack cheese (2 ounces)
Nonstick cooking spray

Steps:

  • Preheat oven to 375 degrees F. In a saucepan cook poblano pepper, onion and celery in 1 teaspoon oil over medium-high heat until tender. Stir in parsley, the 1/8 teaspoon Cajun seasoning and the oregano. Set aside.
  • Place each chicken breast half between two pieces of plastic wrap. Using the flat side of a meat mallet, lightly pound each chicken breast half to about 1/4 inch thick. Remove plastic wrap.
  • In a shallow dish combine cornmeal and the 1/2 teaspoon Cajun seasoning. Place egg whites in another dish; beat lightly.
  • For each roll, spread about 1/4 cup of the vegetable mixture near an edge of the chicken breast. Sprinkle with 1 tablespoon of the cheese. Fold in the side edges; roll up from edge with the vegetable mixture.
  • Dip rolls into egg whites and coat with cornmeal mixture. Place rolls, seam side down, in a greased foil-lined shallow baking pan. Coat with cooking spray. Bake, uncovered, for 35 to 40 minutes. Sprinkle chicken with remaining 1/4 cup shredded cheese. Bake about 5 minutes more or or until chicken is no longer pink (170F). To serve, transfer chicken to four serving plates.

  • Giving these with their prescribed spicy ingredients- all of them can, of course, be spiced up according to your likes/desires. Preheat oven to 375 degrees F. Using a meat mallet, flatten chicken breasts to about 1/8 inch thickness. Set aside. Combine cornmeal and taco seasoning in a bowl; have beaten egg in another. Slice green chiles in half and spread flat. Place one half green chile on one chicken breast. Top with a slice of cheese. Season to taste with cilantro, black pepper and grnd chile. Mix in sides of chicken breast, then roll up from one end. Dip rolled chicken in egg, then in cornmeal. Repeat for each chicken breast, then bake in 375-degree oven for 25-30 min. Top with your favorite sauce and shredded cheese.
