Easy Poireaux Vinaigrette (Poached Leeks) | Recipe Pocket image

Leeks in vinaigrette (poireaux vinaigrette) is an easy veggies sides for dinner. This very healthy leek side dish is gluten free, vegetarian and vegan. Low in calories but full with flavour, this is simple cooking at it’s best. This easy make ahead veggie sides is delicious warm or at room temperature. This French leeks recipe is great for serving at dinner parties or as an everyday side.

2-4 leeks (about 700 grams)
1 1/2 litre (6 cups) chicken stock or veggie stock or water
Salt/pepper seasoning
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
3 tablespoons olive oil
Fresh chopped chives
Scallion or red onion

Steps:

  • Cut off and discard the root end and most of the dark green tips of the leeks, keeping most of the light green part near the white.
  • Pull away and discard any old and discoloured leaves.
  • Cut the leeks in half lengthwise, leaving about 5 cm at the root end uncut.
  • Thoroughly wash the leeks under cold running water, fanning out the layers to remove any trapped dirt. Drain well.
  • Cut the leeks into 18 cm (7 inch) pieces. Tie each leek with twine, securing at both ends.
  • Place the prepared leek into a large pot, add the stock or water and bring to the boil. Put the lid on the pot, turn down the heat and simmer for 40 – 50 minutes.
  • Use tongs to remove the leeks from the stock, transfer to a wire rack placed on top of a tray and allow to drain and cool with the twine still in place.
  • Combine the dressing ingredients in a small bowl and mix well and put aside.
  • Arrange the cooled leeks on a serving platter, remove the twine then drizzle over some of the dressing. Garnish with a sprinkling of finely chopped red onion and chives then serve.

4 medium leeks, roots removed, outer leaves & tops removed, washed clean (about 2 1/4 lbs, you should have 6-inch of each leek left)
0.5 (14 ounce) can chicken broth (approx 3/4 cup)
salt
1 tablespoon margarine or 1 tablespoon butter

Steps:

  • Cut leeks diagonally into thirds and then diagonally in half to form 6 triangular pieces from each leek.
  • Rinse under cold water; drain.
  • Melt margarine in a heavy skillet; add leeks.
  • Cook until lightly browned, stirring gently, approx 15 minutes.
  • Stir in the broth cover and simmer for 30 minutes or until golden and the broth has mostly evaporated.

  • 01 - Boil the Egg and set aside to cool. 02 - Chop the root off the Leeks and slice lengthwise, but not all the way through. 03 - Open the Leeks like a book and wash well in cold running water to remove dirt. 04 - Bring a large skillet filled with Salted Water to a boil. 05 - Add the Leeks, and cook over medium heat for about 5 minutes, or until just soft. 06 - Transfer leeks to a large bowl of ice water to stop them from cooking further. 07 - Now you can lengthwise-split open the Leeks and transfer to a rack, cut side down, to drain thoroughly. 08 - While the Leeks drain, chop the boiled Egg and set aside. 09 - In a bowl, whisk Vinegar, Mustard, Salt and Pepper together. 10 - Slowly add the Peanut Oil, whisking constantly, until you obtain a smooth cream. Season, and set aside. 11 - Remove the leaves from half the Parsley Sprigs. Chop the leaves and set aside. 12 - Divide the Leek halves equally among 4 salad plates. 13 - Drizzle Vinaigrette over Leeks, and sprinkle with chopped Parsley and chopped Egg. 14 - Garnish each plate with a sprig of Parsley.
