Love this recipe!!! This is a combination of recipes that Dh and I came up with. It's my filling recipe and his sauce recipe. This looks like a lot of work, but really it's not. I usually make the filling up ahead of time and then all I have to do is roll them and make the sauce. Serve with black beans and spanish rice! Enjoy!!

Number Of Ingredients 21

2 cups rotisserie-cooked chicken
2 poblano peppers, roasted and chopped
1 red onion, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons chili powder
1 cup monterey jack cheese, shredded
10 soft taco-size flour tortillas
1/4 cup green onion, finely sliced
1 large shallot, finely minced
2 garlic cloves, minced
1 -2 serrano peppers (optional) or 1 -2 jalapeno pepper, minced (optional)
2 tablespoons butter
1/2 teaspoon cumin
1/4 teaspoon coriander
1/2 teaspoon garlic powder
1/4 teaspoon white pepper
2 tablespoons flour
8 ounces sour cream
2 cups chicken broth

Steps:

  • To roast the peppers: Cut poblano peppers in half, remove all seeds and stem. Roast poblano peppers at 450 degrees until skin begins to blister and turn black in spots, this should take about 10-15 minutes. ***I save the plastic produce sack the peppers came in and when they come out of the oven, I place them in the sack and seal the sack. Let sit 5-10 minutes. The steam from inside will loosen the black skin. Pick what you can of the black parts off, then chop the peppers.
  • Combine the first 8 ingredients in a bowl. Set aside.
  • To make the sour cream enchilada sauce: Saute shallot, garlic and peppers in butter over medium heat in a large skillet until veggies soften. Add spices. Cook for another minute.
  • Combine sour cream and flour well. Add to skillet along with chicken broth. Wisk to combine. (It'll look a little funny for a minute, but don't worry!) Bring mixture to boil. Reduce heat, wisk and simmer until sauce is thick and creamy.
  • Add 3/4 cup of enchy sauce to the filling mixture. Combine well.
  • In a greased 13x9 casserole, coat the bottom of dish with 1/2 cup of enchy sauce.
  • Place 1/4 cup of filling down the center of each tortilla. Roll up and place seam side down in casserole. Repeat with remaining tortillas and filling. Top casserole with remaining enchy sauce.
  • Bake at 375 degrees for 20 minutes or until warm and bubbly!
  • Garnish with green onions.

Put mild-but-tasty Poblano chiles to use by stuffing them inside warm corn tortillas! Trust us—it's a no-meat meal you'll make again and again.

4 poblano chiles
1 cup coarsely chopped red onion, plus thinly sliced red onion for garnish
4 cloves garlic
1 tbsp. olive oil
1 cup fresh cilantro leaves
1 cup vegetable stock
¾ cup heavy cream
1 can (about 15 oz.) pinto beans, rinsed
1 cup cooked brown rice
2 tsp. ground cumin
1?½ cups shredded Mexican cheese blend
8 corn tortillas, warmed
1 lime, quartered

Steps:

  • Preheat the oven to 400°. On a baking sheet, toss the chiles, chopped onion, garlic, and oil; season with salt and pepper. Roast, turning once, until the chiles are just browned, 15 to 18 minutes. Let cool. Using paper towels, wipe the skins off the chiles. Stem, seed, and roughly chop the chiles.
  • In a blender, puree half the roasted vegetables, half the cilantro, the stock, and cream into a sauce. In a 7-by-11-inch baking dish, spread 1/2 cup of the sauce into an even layer.
  • In a bowl, toss the remaining roasted vegetables, the beans, rice, cumin, and half the cheese for the filling. Spoon about 1/4 cup of the filling down the center of each tortilla. Roll up the enchiladas and transfer to the baking dish, seam-side down. Top with the remaining sauce. Sprinkle with the remaining cheese. Bake until the cheese is browned in spots, about 15 minutes.
  • Garnish the enchiladas with the sliced onion and the remaining cilantro. Serve with the lime wedges.

  • Cut lobster into medium bite-sized pieces and par-cook in white wine in a pan 1 to 2 minutes. Drain and divide into 3 portions. Cover a sizzle plate with 1 cup poblano sauce (save remainder for another use). Place corn tortillas on a hot grill or saute pan and warm about 10 seconds per side to soften, then remove. Form tortillas into 3 enchiladas with lobster and some shredded cheese. Place on sizzle plate and top with more cheese and 1/4 cup tomatoes. Bake, 5 minutes. Transfer enchiladas to a plate with a spatula, then push cooked sauce on top of enchiladas. Add a ramekin of pico de gallo on the side (save remainder for another use), a lemon wedge and a sprig of cilantro and serve.

I prepared the poblano sauce for these enchiladas in my vitamix, but you can also use a regular blender or food process. Just puree the ingredients until smooth (juice the lime instead of adding it whole) and heat the sauce in a pan until warm. I added a jalapeño because I like things spicy, but you can leave it out if you don't want the extra heat.

  • To prepare the pork, in a sauce pan over high heat, combine the pork, garlic, onion, salt and water. Bring to a boil, reduce the heat, cover and simmer till the pork is tender, about 40 min. To make the chili sauce, in a blender or possibly food processor fitted with the metal blade, combine the chilies, lowfat milk, garlic and salt. Process to create a smooth puree then transfer to a bowl. Add in the cream and stir to mix well. In a saute/fry pan over medium high heat, saute/fry the onion till golden brown. Add in the chili sauce and simmer, uncovered, till the mix thickens slightly, about 10 min. Cover and keep hot over low heat. Wet each tortilla lightly and microwave it for 15 seconds or possibly till soft. Dip the tortilla, one at a time, into the poblano-cream sauce and top each tortilla with an equal amount of the shredded pork. Mix in half and arrange on a hot serving platter. Cover the tortillas with the remaining sauce and garnish with the cheese, lettuce, avocado and radishes. Serve immediately. Serves 6.
