Make the most of the British plum season with this comforting plum crumble recipe. See the top recipe tip below for advice on freezing.

12-15 large ripe plums, stones removed, chopped
½ lemon, juice only
160g/5½oz caster sugar
175g/6oz plain flour, sifted
50g/2oz caster sugar
50g/2oz dark muscovado sugar
100g/3½oz butter, chilled, cut into cubes
100g/3½oz rolled porridge oats
2 lemons, zest only
custard, to serve

Steps:

  • Preheat the oven to 180C/360F/Gas 4.
  • Grease a 30cm/12in square ovenproof dish.
  • Place the plums and lemon juice into the bottom of the dish and sprinkle with the sugar.
  • For the crumble, in a bowl, rub together the flour, caster sugar, muscovado sugar and cold butter cubes. (It is important that the butter is cold, or you will end up making more of a dough than a crumble.) When a crumble has been achieved, add in the oats and lemon zest. Mix well.
  • Sprinkle the crumble mixture over the plum mixture in the dish, then bake in the oven for 40-45 minutes, or until the topping is golden-brown.
  • To serve, spoon out generous portions into bowls and serve with lashings of custard.

Use two types of sugar and ground almonds for the perfect crunchy crumble topping, layered on top of cinnamon-spiced plums

800g ripe cooking plums, such as Victoria or dessert plums, halved and stoned
50g light brown sugar
finely grated zest 1 orange
1 tsp ground cinnamon
1 tsp plain flour
250g plain flour
150g butter
80g caster sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.
  • Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the plums and bake in the oven for 30–40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.

The Times published Marian Burros’s recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. “To counter anticipated protests,” Ms. Burros wrote a few years later, “the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping.” It didn’t help. The paper was flooded with angry letters. “The appearance of the recipe, like the torte itself, is bittersweet,” wrote a reader in Tarrytown, N.Y. “Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it.” We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

    1. Preheat the oven to 190°C/375°F/gas 5.
    2. Peel and core the apples, then quarter and cut in to chunks.
    3. Put the apples into a pan with the sugar and 1 tablespoon of water, then cook over a low heat for 5 minutes to soften slightly, stirring occasionally, then tip into a small ovenproof baking dish.
    4. Place the flour and oats in a bowl and mix well. Chop the butter into small cubes and add this to the oats and flour. Mix and rub in with your fingertips until it resembles an even crumb texture.
    5. Add the sugar and mix through, then cover the fruit with the crumble mixture.
    6. Bake for around 20 minutes, or until golden and cooked through.
