COOKIE DOUGH RECIPE - BBC FOOD

Cookie dough recipe - BBC Food image

If you’re a fan of cookie dough ice cream, why not try making your own? This egg-free dough can be eaten raw – read on to discover the secret.

Provided by Annie Rigg

Prep Time 30 minutes

Cook Time 10 minutes

Yield Serves 4–6

Number Of Ingredients 7

85g/3oz plain flour
100g/3½oz unsalted butter, softened
75g/2¾oz soft light brown sugar
50g/1¾oz caster sugar
1 tsp vanilla bean paste
75g/2¾oz dark chocolate chips
vanilla ice cream, to serve

Steps:

  • Start by heat-treating the flour to kill any bacteria. This can be done in the microwave, in a frying pan or in the oven. If using a microwave, tip the flour onto a plate and microwave on medium–full power for 90 seconds, stirring the flour every 15 seconds. For the frying pan method, tip the flour into a heavy-based frying pan and place over a medium heat, stirring almost constantly for about 4 minutes until the flour is hot. To heat-treat flour in the oven, preheat the oven to 170C/150C Fan/Gas 3½, tip the flour onto a baking tray in an even layer and heat for 5 minutes until the flour is hot, stirring halfway through. The flour must be cooled to room temperature before mixing the cookie dough.
  • Beat the butter until smooth. Add both sugars and beat for 2–3 minutes until pale and creamy. Add the vanilla and mix well.
  • Sift the cooled flour over the mixture and mix until smooth, then stir in the chocolate chips.
  • Chill slightly before serving, or store in the fridge until ready to use, crumbled and stirred through ice cream.

CHOCOLATE CHIP COOKIE DOUGH RECIPE - FOOD NETWORK

Chocolate Chip Cookie Dough Recipe - Food Network image

Meet your new favorite sweet treat; just a little bit will enhance your ice cream, milkshake, buttered toast-or serve as the filling of a cookie sandwich (smush some of the dough in between two vanilla wafers).

Provided by Food Network Kitchen

Categories     dessert

Total Time 10 minutes

Cook Time 10 minutes

Yield about 1 cup

Number Of Ingredients 9

1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1/2 cup packed light brown sugar
1/4 cup granulated sugar
4 tablespoons unsalted butter, at room temperature
2 tablespoons plain yogurt
1/2 teaspoon alcohol-free vanilla extract
1/3 cup semisweet mini chocolate chips

Steps:

  • Microwave the flour in a small microwave-safe bowl for 1 minute. Remove and stir well. Microwave for an additional minute or until the temperature reaches 180 degrees F. Sift into a medium bowl, then whisk in the baking soda and salt (see Cook's Note).
  • Beat the brown sugar, granulated sugar, butter, yogurt and vanilla extract with an electric mixer on medium-high speed in a large bowl until well combined, about 2 minutes. Add the flour mixture and mix on low speed until well incorporated. (Turn off the beaters and use your hands to help combine if needed.) Fold in the chocolate chips with a rubber spatula or mix them in with your hands.
  • Refrigerate in an airtight container for up to 5 days.

  • Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

  • Place the yeast and caster sugar in a bowl with 290ml warm (not hot) water. Let sit for 5-10 minutes, until it begins to foam.

Sift the flour into a large bowl and stir in the salt, making sure it is evenly distributed. Create a well and then gently pour in the liquid. Bring together to form a dough. If the dough is a little dry at this point, add a little more water and make sure it is fully combined. Dust the work surface with a little flour and knead the dough for 15-20 minutes until smooth and stretchy.

Shape the dough into a round or oval then place on a baking tray dusted with a little flour. Cover with oiled cling film and leave to rise in a warm place for 1 hour, until the dough has doubled in size. Preheat the oven to 230°C, fan 210°C, gas 8.

Remove the cling film, dust the top of the loaf with a little flour. Turn the oven down to 200°C/180°C fan/gas 6 and bake for 20 minutes. Then check every 1-2 minutes until risen and golden. Transfer to a cooling rack and tap the base of the bread to check it is cooked – it should sound hollow. The loaf is best enjoyed warm from the oven.

Cook’s tip: plain flour requires more kneading than strong bread flour in order to form the gluten that gives the dough its elasticity – so don’t give up!
