16 ounces unsliced French bread
1 lb lean ground beef
1 (6 ounce) can tomato paste
1/4 cup sliced green onion
1/4 cup chopped pitted ripe olives
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon oregano
1/8 teaspoon ground black pepper
1/3 cup grated parmesan cheese
2 medium tomatoes, sliced
1 medium green sweet pepper, sliced into rings
1 cup shredded pizza cheese, blend

Steps:

  • Preheat broiler.
  • Cut the French bread in half horizontally and place halves, cut side up, on a broiler pan. Broil 4 inches from heat for about 1-2 minutes or until the bread is lightly toasted. Transfer bread to cookie sheets and set aside.
  • Turn off broiler and set oven temperature to 350º.
  • In a large skillet, brown ground beef until thoroughly cooked. Drain off fat.
  • Stir in tomato paste, green onion, olives, water, salt, oregano, and black pepper.
  • Cook over medium heat until heated through. Remove from heat and stir in Parmesan cheese.
  • Top bread halves evenly with the meat mixture.
  • Top with the tomato slices, green pepper slices and pizza cheese.
  • Bake for 8-10 minutes or until cheese is melted.

3 medium tomatoes, sliced
2 cups shredded mozzarella cheese

Steps:

  • In a bowl, combine the uncooked beef, olives, onion, Parmesan cheese, tomato paste, oregano, salt and pepper. Spread to the edges of the cut surface of the bread. , Broil 6 in. from the heat for 8-10 minutes or until the meat is fully cooked. Top with tomatoes and cheese. Broil 2-3 minutes more or until cheese is melted. Serve immediately.

PIZZA BY THE YARD | JUST A PINCH RECIPES
My family has made this recipe for years. My kids ask for this and will definately be at home when I make this for dinner, I even get calls from grown kids out of state requesting this recipe.(Even my kids friends ask for this) It's easy and filling, to me the ultimate comfort food. Can be easily adapted for party fare or family snacks. Can be frozen for up to a month. I make 2x batches and it never makes it to the freezer.

  • If you are freezing this do all steps but baking, cut loaves in half then split for ease in wrapping and storage. wrap with foil and plastic and freeze. to bake remove wrap place on cookie sheet and bake til hot throughout. Can be microwaved but I prefer Oven for crispy bread and cheese browing a little.

  • Grease a large bowl with cooking spray. In a small bowl add water and sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes. In another large bowl, add flour, salt, and oil. Pour in yeast mixture, then mix with a wooden spoon until everything is combined and a shaggy dough begins to form. Knead against sides of bowl until dough starts to come together, then turn onto your work surface and knead, adding a pinch of flour if needed, until it feels elastic and only slightly tacky, 5 minutes. Form into a tight ball, place into prepared bowl, and cover with a clean dish towel. Let rise in a warm spot in your kitchen until doubled in size, about 1 hour and 30 minutes. Gently punch down dough, then divide in 2, and roll into balls. At this point, you can freeze one, or make two pizzas. Let dough balls rest as you preheat oven to 500° and grease a large baking sheet with olive oil. Sprinkle all over with 2 tablespoons cornmeal.  On your work surface, gently flatten one ball of dough and roll with a rolling pin (or stretch with your hands) until about 12” in diameter (as thin as you can). Carefully transfer to prepared baking sheet and brush dough all over with oil. Then, add your 1/2 cup sauce to middle of dough and spread outwards with a spoon or ladle, leaving about 1” for the crust. Top with half the slices of mozzarella. Bake until crust is golden and cheese is melty, about 15 minutes.  Top with fresh basil leaves, a drizzle of olive oil, and red pepper flakes.  Repeat with remaining dough and toppings for second pizza.
