This creamy French bread pizza with fresh spinach, cream cheese, and artichoke is a weeknight dinner dream.

1 loaf soft French or Italian bread
2 tbsp. olive oil
1 1/4 c. shredded part-skim mozzarella cheese
1 package frozen chopped spinach
8 oz. reduced-fat cream cheese (Neufchâtel)
c. fat-free Greek yogurt
c. Grated Parmesan cheese
2 clove garlic
1 package frozen artichokes
1 lemon
snipped chives

Steps:

  • Preheat oven to 400 degrees F. Cut bread in half lengthwise, then cut each piece in half across. With hands, press bread to flatten. Line large cookie sheet with foil.
  • Arrange bread, cut sides up, on prepared pan. Brush with oil and sprinkle with 1 cup mozzarella. Bake 5 to 7 minutes or until cheese melts.
  • In large bowl, stir together spinach, cream cheese, yogurt, Parmesan, garlic, and 1/4 teaspoon each salt and pepper until combined. Divide mixture among pieces of bread, spreading evenly. Top with artichokes and remaining 1/4 cup mozzarella. Bake 12 to 18 minutes or until golden brown.
  • Grate peel of half of lemon over pizzas. Garnish with chives.

1-1/2 heads cauliflower (about 1-1/2 pounds), chopped (about 6 cups)
1/2 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1 large eggs, lightly beaten
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 425°. Working in batches, place cauliflower in food processor; process until finely ground. Transfer to a large microwave-safe bowl; repeat with remaining cauliflower. Microwave, covered, until cauliflower is tender, about 8 minutes. When cool enough to handle, squeeze dry; return to bowl., Stir in remaining ingredients until combined. Line a baking sheet with parchment. Press and shape cauliflower mixture into an 10-in. circle or 13x6-in. oval., Bake until edges are browned, 20-25 minutes. Top as desired; bake until toppings are heated through, 10-12 minutes longer.
