Greek Beef Pitas Recipe: How to Make It image

A local restaurant that's famous for pitas inspired me to make my own Greek-style sandwiches at home. Feel free to add olives if you'd like. —Nancy Sousley, Lafayette, Indiana

Number Of Ingredients 11

1 pound lean ground beef (90% lean)
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
3/4 teaspoon salt, divided
1 cup reduced-fat plain Greek yogurt
1 medium tomato, chopped
1/2 cup chopped peeled cucumber
1 teaspoon dill weed
4 whole pita breads, warmed
Optional: Additional chopped tomatoes and cucumber

Steps:

  • In a large skillet, cook beef, onion and garlic over medium heat 8-10 minutes or until beef is no longer pink and vegetables are tender, breaking beef into crumbles; drain. Stir in oregano and 1/2 teaspoon salt., In a small bowl, mix yogurt, tomato, cucumber, dill and remaining 1/4 tsp. salt. Spoon 3/4 cup beef mixture over each pita bread; top with 3 tablespoons yogurt sauce. If desired, top with additional tomatoes and cucumber. Serve with remaining yogurt sauce.

Ready this satisfying wrap in 15 minutes or less! After forming the beef into small patties, you’ll brown the balls and prepare the pitas. Layer the hummus, beef, and toppings, put a few lemon wedges on each plate, and you’re good to go. Amp up the flavor, if you’d like, with a flavored hummus, like roasted red pepper or zesty garlic. The wrap is plenty satisfying on its own, but if you’re feeling adventurous (or you’d like something a little more on the table), consider a side of rice, store-bought tabouli salad, an assortment of mixed olives, or roasted fingerling potatoes, seasoned with salt, pepper, and paprika.

kosher salt and black pepper
2 tablespoons olive oil
4 pocketless pitas
¾ cup store-bought hummus
¼ small red onion, sliced
2 tablespoons fresh flat-leaf parsley
1 lemon, cut into wedges

Steps:

  • Form the beef into 16 ½-inch-thick patties and season with the oregano, ½ teaspoon salt, and ¼ teaspoon pepper.
  • Heat 1 tablespoon of the oil in a large skillet over medium heat and cook the patties, 2 minutes per side for medium.
  • Top the pitas with the hummus, patties, onion, and parsley. Drizzle with the remaining tablespoon of oil and serve with the lemon wedges.
