1 small yellow onion, halved
¼ cup extra-virgin olive oil
¼ cup red wine vinegar
Juice of ½ lemon
4 garlic cloves, peeled
2 fresh red finger chiles (or Anaheim chiles, if not available)
One 1-inch piece fresh ginger, peeled
1 tablespoon kosher salt
1 teaspoon smoked paprika
1 teaspoon sweet paprika
1 teaspoon dried oregano
½ teaspoon cayenne pepper, plus more if desired
One 2½- to 3-pound whole chicken

Steps:

  • 1. In a blender, combine the onion, olive oil, vinegar, lemon juice, garlic, chiles, ginger, salt, smoked paprika, sweet paprika, oregano, cayenne, and ? cup water. Blend on high speed until smooth. 2. Dry the chicken with paper towels. Using sharp kitchen shears or a sharp knife, cut along one side of the backbone, leaving the other side attached. Lay the chicken breast-side up on a cutting board and press down on the breastbone with your hands to flatten the chicken. Put the chicken in a large zip-top plastic bag and pour in the marinade. Massage the marinade all over the chicken, then squeeze as much air out of the bag as possible and seal. Place it on a baking sheet with the chicken breast-side down and refrigerate for at least 4 hours or up to overnight. 3. Preheat the oven to 425?F. Line a 4-inch-deep roasting pan with parchment paper. 4. Remove the chicken from the marinade, letting any excess drip off (discard the bag). Place the chicken in the prepared roasting pan and roast on the bottom rack for 40 to 45 minutes, until the thickest part of the thigh registers 165?F on an instant-read thermometer. Use a turkey baster or large spoon to baste the chicken with the rendered juices in the pan. 5. Set the oven to broil but keep the chicken on the bottom rack (putting the parchment paper closer to the broiler could cause it to catch fire). Broil for 4 to 5 minutes, until the skin is golden brown and crispy. 6. Transfer the chicken to a grooved cutting board to catch any juices and let it rest for 5 to 10 minutes before carving and serving.

1/2 cup loosely packed fresh cilantro leaves, plus more for garnish
1 small shallot, chopped
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon paprika
2 garlic cloves, crushed
2 piri piri or other bird’s eye chiles, stemmed
1 1/2 teaspoons dried oregano
1 tablespoon kosher salt
1 1/4 pounds boneless skinless chicken thighs, cut into 1-inch pieces
Canola oil, for brushing
1 pound shishito peppers
16 small wooden skewers, soaked in water 30 minutes

Steps:

  • Place bell pepper, cilantro, shallot, vinegar, olive oil, paprika, garlic, chiles, oregano, and salt in a food processor; process until smooth. Reserve 1/2 cup of the marinade. Combine chicken and remaining marinade in a large bowl, and refrigerate for at least 1 hour and up to 3 hours.
  • Preheat a grill to medium-high (about 450°F), or heat a grill pan over medium-high, and brush grate with oil. Thread shishitos and chicken onto skewers. Grill, turning occasionally, until just cooked through, about 8 minutes. Transfer to a platter, and garnish with cilantro. Serve with reserved marinade.

    1. Using a sharp knife, carefully cut the chicken in half along the backbone.
    2. Pick the thyme leaves into a pestle and mortar, peel and add 1 garlic clove, then add the paprika and a pinch of sea salt. Bash to a paste, then muddle in 2 tablespoons of olive oil.
    3. Rub the marinade all over the chicken, making sure to get into all the nooks and crannies. Cover and place in the fridge to marinate for at least 2 hours, preferably overnight.
    4. When you’re ready to cook, preheat the oven to 180ºC/350ºF/gas 4. Place a large griddle pan over a high heat.
    5. Quarter the unpeeled onions and halve any larger tomatoes, then place on the hot griddle with the chillies and the remaining unpeeled garlic cloves. Grill for 5 to 10 minutes, or until charred all over, turning regularly.
    6. Remove the garlic skins and peel the onions, then add all the vegetables to a food processor with a splash of red wine vinegar and a good lug of extra virgin olive oil. Blitz until smooth, then add a splash of water to loosen, if needed. Season to taste.
    7. Return the griddle pan to a high heat, add the marinated chicken and sear all over for 8 to 10 minutes, turning regularly. Transfer to a roasting tray, then pop in the hot oven for 45 minutes, or until cooked through.
    8. Meanwhile, cut the sweet potatoes into rough 2cm wedges. Toss with the paprika, semolina, a small pinch of salt and black pepper and a lug of olive oil.
    9. Spread the wedges out on 2 large baking trays, then place in the oven for 25 to 30 minutes, or until tender and crisp.
    10. To make the jalapeño salsa, drain and add the jalapeños to a food processor with a splash of the pickling juice. Tear in the coriander (stalks and all) and add a splash of extra virgin olive oil. Blitz well until smooth.
    11. Serve the roast chicken with your piri piri sauce, sweet potato wedges and a little jalapeño salsa.

  • Pre-heat oven to 200ºC (180ºC Fan). In a bowl toss 1 red onion, the peppers and garlic cloves with four tablespoons of vegetable oil the smoked paprika and cayenne. Place in a roasting tray and bake for 15 minutes until soft and caramelised. Add the contents of the roasting tray and the rest of the marinade ingredients into a food processor and blitz until a smooth paste is formed. Tip into a bowl. Bring a large deep pan of salted water to the boil. Add the corn pieces and simmer for 5 minutes, drain and remove. Place the whole chicken into the same water, reduce heat and simmer for 30 minutes.  After this time remove the chicken from the water and allow to cool for at least a further 15 minutes.  Now it's time to spatchcock your chicken.  Put the chicken on a board, breast side down.  Cut out the backbone by using strong scissors or shears to cut through the ribs on either side of the back bone. Turn the chicken over and press flat then slash each chicken legs three or four times.  This will allow the marinade and heat when cooked to penetrate quicker. Rub a third of the marinade all over the chicken and leave for at least a couple of hours in the refrigerator for it to soak up all the peri peri flavours. (This can be left overnight ready to be cooked the next day). If you're struggling with time, try and leave it at least half an hour.   Turn oven temperature down to 180ºC (160ºC Fan). Place the rest of the red onion and sweet potato in a deep roasting tray and toss with the remaining vegetable oil and salt and pepper. Place the spatchcocked bird over the top.  Drizzle another third of the sauce over the bird. Cook for approximately 45 minutes, basting every ten minutes with the sauce you have left over, keeping a little bit back to use as a dip. For the final 20 minutes arrange the corn on the cob and cherry tomatoes around the side of the bird to cook.
    Remove from oven and serve the piri-piri chicken with the roasted sweet potato and red onion, cherry tomatoes, corn on the cob and the remaining sauce.

In a blender, add olive oil, Fresno chiles, garlic, ginger, paprika, agave, salt, pepper, and lime juice and zest. Blend until smooth.  Pour about 1 cup of the sauce into a small bowl, cover, and refrigerate until ready to serve.  In a large bowl, add chicken and remaining piri piri sauce, turning to coat. Cover and refrigerate for at least 2 hours, or up to overnight. Remove chicken from fridge at least one hour before cooking to bring to room temperature.  For a gas grill, set half of grill to medium-high heat. For a charcoal grill, place the lit charcoal evenly over one-half side. Cover grill and preheat for 10 minutes.   Oil grates and lay chicken skin-side up over the cool side of the grill (where the burner is off/there is no charcoal). Cover grill and cook for about 50 minutes, until the juices between the leg and the thigh run clear or a thermometer inserted into the thigh reads 165°.  Carefully flip chicken skin-side down over the hot side of the grill (where the burner is on/there is charcoal). Cook for about 5 minutes, until the skin is charred and crisp.  Transfer onto platter, skin-side up. Let rest 10 minutes before slicing and serving with reserved piri piri sauce.
