small onion, chopped

green beans

garlic cloves, finely chopped

all-purpose flour

chicken stock 

1 tbsp.

chopped fresh rosemary

2 tsp.

kosher salt, plus more to taste

1/2 tsp.

dried thyme

1/2 tsp.

dried oregano

1/2 tsp.

ground black pepper

3/4 c.

uncooked orzo pasta

3 c.

chopped cooked turkey 

2 c.

packed baby spinach leaves

1/4 c.

fresh lemon juice, optional

Ground black pepper, to taste

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat. Add the carrots, celery, onion, and green beans. Cook 7 minutes or until vegetables begin to soften. Add the garlic and cook 1 minute. Stir in the flour. Cook, stirring constantly, for 2 minutes. Slowly stir in the stock, rosemary, salt, thyme, oregano and black pepper and bring to a boil. Stir in the orzo. Reduce heat to medium so that the soup gently boils and cook for 8-10 minutes (until the orzo is tender). Add the turkey, spinach, and lemon juice, if using. Cook for 1 more minute or until spinach wilts. Season with more salt and black pepper and serve immediately.

Chopped parsley - 1 cup.
Cooked white rice - 1 cup.
Chicken stock - 3 cups.
Dry white wine - 1/4 cup.
Yellow bell pepper - 1 no. (It should be chopped)
Black pepper - to taste. (Freshly ground)
Kosher salt - to taste.
Chopped carrots - 1/2 cup.
Red onion - 1 cup. (Chopped)
Garlic clove - 1 no. (Minced)
Ground turkey - 1 lb.
Bacon - 1/2 cup. (It needs to be cut into half inch pieces)

Steps:

  • Bacon must be browned in a large pot and the heat needs to be kept at medium level. (You should make sure that it becomes crispy and fat is rendered)
  • The bacon has to be taken out and placed on a plate that is lined with paper towel.
  • Drain all the bacon and set aside one tablespoon of bacon fat.
  • The heat has to be elevated to medium-high and ground turkey needs to be browned in the bacon fat for 3 minutes.
  • Carrots, red onion and garlic must be stirred in and seasoned with half teaspoon black pepper and 1 teaspoon salt.
  • They need to be sauteed for one minute.
  • Stock, white wine and bell pepper have to be added and they should be brought to a boil and simmered for 5 minutes.
  • Parsley and cooked rice have to stirred in and ensure that they are warmed through.
  • You can serve it with crispy bacon.
