all-purpose flour, plus more for dusting

baking powder

1 tsp.

kosher salt

2 1/2

sticks cold salted butter

2 1/2 c.

buttermilk

3 tbsp.

honey

1/2 tsp.

ground cinnamon

Steps:

  • Preheat the oven to 400 °. Whisk the flour, baking powder and salt in a large bowl. Cut 2 sticks of the butter into small chunks, making sure it stays as cold as possible. Using a pastry cutter or fork, cut the chilled butter bits into the flour mixture until blended thoroughly. Make a well in the center and gently stir in 21/4 cups buttermilk and 2 tablespoons honey until the dough just comes together. Cut out rounds of dough with a floured 21/4-inch round biscuit cutter and place in a 12-inch cast-iron skillet (do not twist the cutter when pressing out the rounds— twisting seals the edges and prevents the biscuits from rising). Gently reroll the scraps if needed and cut out more biscuits (you should have about 14). Brush the tops of the biscuits with the remaining 1/4 cup buttermilk. Transfer the skillet to the oven and bake until the tops and bottoms are golden brown and the dough is cooked through, 25 to 30 minutes.

1/4 c.

olive oil

2 lb.

carrots, peeled and cut into sticks (about 1/2 inch thick)

2 lb.

parsnips, peeled and cut into sticks (about 1/2 inch thick)

2 tsp.

kosher salt

Black pepper, to taste

2 tbsp.

salted butter

1 tbsp.

chopped fresh thyme, plus more for topping

3 tbsp.

honey

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the carrots, parsnips, salt and pepper and toss to coat. Cook, gently tossing occasionally, until the carrots and parsnips are tender and golden in spots, 15 to 20 minutes. Reduce the heat to low and add the butter, thyme and 2 tablespoons honey. Toss until the butter is melted and the vegetables are well coated, 2 to 4 minutes. Transfer to a serving platter, drizzle with the remaining 1 tablespoon honey and top with more thyme.

  • Season the salmon with salt and pepper. Heat a little olive oil in a nonstick skillet over medium to medium-high heat and place the salmon, skin side down (if you left the skin on) in the pan. Cook for 5 minutes on the first side, being careful not to burn the surface. Carefully flip to the other side and cook for another 2 minutes. Remove the salmon to a clean plate.  In the same skillet, add the butter, honey, soy sauce, and juice from the 2 limes. (You can also zest in the lime before you juice it if you'd like.) Stir and cook over medium heat for a couple of minutes, until the glaze is thick. Taste and adjust the flavors, adding more of whatever you'd like. Cook if for another minute or two if you like the glaze very thick.  Place the salmon back into the skillet and spoon the sauce all over the top. Stir together cooked rice with a little lime juice (and zest, if you'd like.) Serve the salmon over the rice, spooning on extra sauce. Sprinkle with chopped cilantro, add a lime wedge, and chow down.

  • Remove phyllo dough package from freezer and place in the fridge for 24 hours to thaw. Remove from fridge 1 hour before using. When working with the phyllo dough, only remove the sheets you immediately need, keeping the other sheets covered in plastic wrap, then a damp cloth.  Toss together the chopped walnuts and cinnamon. Set aside. Preheat oven to 350 degrees. Thoroughly butter a rectangular baking pan. Make sure the sheets of phyllo will generally fit the pan (if they're a little bigger, that's okay.) If they're much bigger, just trim them with a sharp knife. Butter the top sheet of phyllo with melted butter, then grab it and the unbuttered sheet below it. Set the two sheets in the pan, buttered sheet face down. Press lightly into the pan. Repeat this twice more, so that you have six sheets of phyllo in the pan, three of the sheets buttered. Sprinkle on enough walnuts to make a single layer. Butter two sheets of phyllo and place them on top of the walnuts. Add more walnuts, then two more buttered phyllo sheets. Repeat this a couple more times, or until you're out of walnuts. Top with 4 more buttered phyllo sheets, ending with a buttered top. Cut a diagonal diamond pattern in the baklava using a very sharp knife. Bake for 45 minutes, or until the baklava is very golden brown.  While the baklava is baking, combine 1 stick of the butter, honey, water, sugar, and vanilla in a saucepan. Bring to a boil, then reduce the heat to low.  When you remove the baklava from the oven, drizzle half the saucepan evenly all over the top. Allow it to sit and absorb for a minute, then drizzle on a little more until you think it's thoroughly moistened. You'll likely have some of the honey mixture leftover, which you can drink with a straw. Just kidding. Allow the baklava to cool, uncovered, for several hours. Once cool and sticky and divine, carefully remove them from the pan and serve with coffee (or give as gifts!)
