- Preheat the oven to 450 degrees F.
- Add the cornmeal to a large bowl along with the flour, baking powder, salt, basil, sage and thyme and stir together.
- Measure the buttermilk in a measuring cup, add the whole milk and egg and stir together with a fork. Add the baking soda and stir. Pour the milk mixture into the dry ingredients and stir with a fork until just combined. Do not overmix.
- In a small microwave-safe bowl, melt 2 tablespoons butter and 2 tablespoons shortening in the microwave and slowly add to the batter, stirring constantly until combined.
- In a 10-inch cast-iron skillet over high heat, melt the remaining tablespoon of butter and shortening. Pour the batter into the hot skillet, spread to even out the surface and cook over high heat for 1 minute. Then get it into the oven straightaway and bake until golden brown, 20 to 25 minutes. The edges should be crispy.

- Preheat oven to 425ºF. Place the butter in a 9x9-inch square glass baking dish and put in the oven to melt. Keep an eye on it so it doesn't burn!Meanwhile, in a medium bowl, whisk together the dry ingredients.Measure out the milk and maple syrup in a 2-cup liquid measuring cup. Add eggs and whisk well with a fork. Gradually add melted butter to the milk mixture, making sure to leave 2 tablespoons in the bottom of the baking dish.Add the wet ingredients to the dry ingredients and whisk just until the flour is all moistened. Scrape the batter into the buttered baking dish and spread it out with a spatula. Bake in preheated oven for 20–25 minutes, or until the edges are beautifully golden brown and a toothpick inserted in the center comes out clean.Serve hot with butter and maple syrup.

- Preheat the oven to 350 °. Divide the bread between 2 baking sheets. Toast in the oven, tossing once, until crispy and just turning golden brown, 15 to 20 minutes. Transfer to a large bowl. Increase the oven temperature to 375 °. Cook the bacon in a large cast-iron skillet over medium-high heat until golden and crisp, 7 to 8 minutes. Remove to a paper towel-lined plate and discard all but 3 tablespoons fat from the skillet. Add the butter to the skillet and melt. Add the mushrooms and cook, stirring occasionally, until softened, 7 to 8 minutes. Add the onion and celery and cook until beginning to soften, 3 to 4 minutes. Add the chicken broth, parsley, rosemary, basil, thyme, salt and a few grinds of pepper and stir. Slowly ladle the mushroom-broth mixture into the bowl with the bread cubes, tossing as you go, until the dressing has the moisture level you want. Toss in the bacon. Taste and add more seasonings as needed. Pour the dressing into a large casserole dish. Bake until golden and crisp on top, 25 to 30 minutes. Serve piping hot.
