- In a large container, mix ground coffee with water. Cover and allow to sit at room temperature twelve hours or overnight. Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour coffee/water mixture through the strainer, allowing all liquid to run through. Discard grounds. Place coffee liquid in the fridge and allow to cool. Use as needed. To make iced coffee, pack a glass full of ice cubes. Fill glass 2/3 full with coffee liquid. Add healthy splash of half-and-half. Add 2-3 tablespoons sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust half-and-half and/or sweetened condensed milk as needed.

- Preheat a mini waffle iron. For the original chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese. Scoop the batter into the waffle iron (using the recommended amount of batter for your specific waffle iron). Close the waffle iron and cook until the automatic light turns green, about 3 to 4 minutes. Transfer the chaffles to a cooling rack. Serve immediately, or let cool to room temperature and refrigerate for up to 3 days. For the bacon cheddar chive chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese, bacon, and chives. Cook as directed in Step 3. Top with more crumbled bacon, chives, and cheese, as desired.

- A few days before you make the coffee, split the vanilla bean in half the long way, and place it with the sugar in a closed container. To make the coffee, warm 2 brandy snifters. Take the wedge of lime and run it around the edge of the glass to wet the rim. Dip it in the vanilla sugar. Pour the orange liqueur into the glasses and, one at a time, light it on fire and tilt the glass to caramelize the vanilla sugared rim. Douse the flame with a little coffee. In a copper saucepan place the almond liqueur, cognac and coffee liqueur and warm them. Divide them between the 2 snifters then top them off with more coffee. Garnish with whipped cream, chocolate shavings and a straw.
