Chocolate Cookies with Toppings - The Pioneer Woman image

I made these on my Food Network show last weekend, but because we had a lot of family things going on this week, I wasn’t able to post them here until

Provided by Ree Drummond

Categories     Valentine's Day    dessert    main dish

Total Time 2 hours 10 minutes

Prep Time 2 hours

Cook Time 10 minutes

Yield 16 servings

Number Of Ingredients 14

2 sticks Salted Butter, Slightly Softened
1 c. Powdered Sugar
1 whole Egg
2 tsp. Vanilla Extract
2 1/2 c. Flour
1/2 c. Cocoa Powder
3/4 tsp. Salt
4 oz. weight White Almond Bark
4 oz. weight Chocolate Almond Bark
DIPPING BAR
Pistachios, Finely Chopped
M & M's, Slightly Chopped
Toffee Bars, Chopped
Assorted Nuts, Sprinkles, Candies

Steps:

  • For the cookies: Cream the butter with the powdered sugar. Add the egg and vanilla and mix to combine. Add the flour, cocoa powder and salt, and mix together until the dough comes together. Place plastic wrap on the surface of the dough and refrigerate for 2 hours. Preheat the oven to 375 degrees F. Line baking sheets with baking mats or parchment. Roll out the cookie dough and cut out the cookies using a rectangular cookie cutter, re-rolling the scraps in order to use as much of the dough as possible. Place the cookies onto the prepared baking sheets. Bake for 7 to 9 minutes, in batches if necessary, being careful not to burn. Cookies will remain the same general size and shape after they bake. Remove from the oven and place the cookies on a cooling rack. Allow them to cool completely. Melt the almond barks in separate bowls in the microwave. Dip half of each cookie into the white almond bark and half into the chocolate bark. Immediately sprinkle or press toppings from the dipping bar over both sides of the cookies. Gently set on parchment paper or another nonstick surface and allow to cool before serving.

CHOCOLATE VALENTINE COOKIES - THE PIONEER WOMAN

Chocolate Valentine Cookies - The Pioneer Woman image

My mom and I used to make these together every Valentine’s Day, and the recipients ranged from cute little girlfriends in the more innocent early adol

Provided by Ree Drummond

Categories     Valentine's Day    dessert    main dish

Total Time 2 hours 12 minutes

Prep Time 2 hours

Cook Time 12 minutes

Yield 16 servings

Number Of Ingredients 11

2 1/4 c. All-purpose Flour
1 tsp. Baking Powder
1/4 tsp. Salt
1/2 tsp. Ground Cinnamon
1/4 c. Unsweetened Cocoa Powder
1 c. Firmly Packed Brown Sugar
1 whole Large Egg
1 1/2 tsp. Vanilla Extract
Powdered Sugar, For Sifting
Alphabet Stencils
2 sticks (1 Cup) Unsalted Butter, Softened

Steps:

  • Combine flour, baking powder, salt, cinnamon, and cocoa powder in a bowl. Whisk together and set aside. In the bowl of an electric mixer, cream butter and brown sugar until fluffy. Add egg and vanilla and beat until combined. Add flour/cocoa mixture in two or three batches, mixing well after each addition. Place dough into a large Ziploc bag and flatten slightly with your hand. Seal bag and refrigerate for two hours. To make to cookies, preheat oven to 350 degrees. Remove dough from bag and place on a floured surface for 5 to 10 minutes. Roll out to 1/4-inch thickness and cut with a heart cutter. You'll need to consolidate and re-roll the dough as you go. Place on a cookie sheet lined with parchment paper or a baking mat. Bake for 12 minutes, or until set (but not browning at all.) Remove from oven and allow to cool completely. Place stencils on cooled cookies, spelling out things like "Love You" and "Be Mine". Lay on pieces of scrap paper on any areas of exposed cookie. Lightly sift powdered sugar over the stenciled cookies. Carefully remove paper and stencils with tweezers, being careful not to drop powdered sugar as you remove. Use a tiny brush to correct "errors."Arrange on a platter or in a basket and deliver to your sweetie!(Spread chocolate icing or Nutella on leftover cookies if desired. Yum!)Makes 12 to 18 cookies, depending on size of heart cutter.

  • Preheat oven to 375ºF. Grease a 9x13 pan and set aside. In a medium bowl, whisk together 1 1/2 cups flour, cocoa, baking powder, and salt. Set aside. With a mixer, cream together the butter and sugars for about 3 minutes. Add egg and vanilla extract. Mix until well combined. Slowly mix in the dry ingredients. Mix until just combined. (Dough should be thick and dense, the consistency of sugar cookie dough. Add up to 1/4 cup additional flour if dough is too moist and fudgy.)Press cookie dough into the prepared pan. Bake for 12 minutes or until cookie bars are set. Don’t overbake. Remove from oven and let cool completely. While the cookie bars are cooling, make the frosting. Using a mixer, beat the butter on medium speed until creamy, about 2 minutes. With the mixer on low, slowly add the confectioners' sugar, cream or milk, and vanilla extract. Increase to high speed and beat for 3 full minutes. Add up to 1/2 cup more confectioners' sugar if frosting is too thin or another tablespoon of cream or milk if frosting is too thick. Add a drop of red food coloring and mix until smooth. If you want the frosting darker, you can add more food coloring. Cut the cooled bars with a small heart shaped cookie cutter. Frost the hearts with the frosting, using a knife or piping bag. Decorate with sprinkles. Note: Save the cookie scraps for snacking! They are great on top of ice cream or in a milkshake. Store the frosted cookie hearts in an airtight container for up to 2 days.
