These chicken street tacos are super simple to make, full of amazing fresh flavor and will soon be your families favorite meal!

Number Of Ingredients 17

6 boneless skinless chicken breasts, cut into pieces
2 Tbs. olive oil
3 garlic cloves, minced
1 onion, chopped
2 Tbs. chili powder
2 tsp. paprika
1 Tbs. cumin powder
Salt and pepper, to taste
1 Tbs. taco seasoning
14 oz. can tomato sauce
1/2 cup water (or more)
1 pkg. corn tortillas
1-2 cups shredded cheese
Tomatoes, diced (or salsa)
Fresh cilantro, chopped
Sour cream or salsa ranch

Steps:

  • Cut the chicken breasts into small pieces and set aside. Dice the onion into small pieces. Heat a large saute pan to high heat. Add the olive oil to the pan. Add the chicken pieces to the pan. Let the chicken pieces heat in the oil, until it's golden brown. Toss the chicken and continue to cook on the other side. Add the onions and seasonings and continue to saute. Turn the heat down to medium heat and then add the tomato sauce and water to the mixture. Simmer the chicken until it thickens and the chicken is cooked through. For the tacos, heat a griddle to medium heat. Place several corn tortillas onto the griddle. Add some shredded cheese on to the tortillas. Add some chicken onto the tortilla. Once the cheese is melted, remove the tacos from the griddle. Serve with chopped cilantro, tomatoes, salsa, etc. If you like a creamy aspect to your tacos, mix together ranch and salsa and serve the tacos with this sauce.

  • Sprinkle both sides of the chicken breasts with the taco seasoning and chili powder. Rub in the seasonings as much as you can. Heat the olive oil in a heavy skillet over medium heat. Cook the chicken breasts on both sides until deep golden and totally done in the middle, about 4 minutes per side. Remove from the skillet and let rest for a few minutes. In the same skillet, whisk in the tomato sauce, hot water, and several dashes of hot sauce and bring to a gentle boil. Reduce the heat to low and keep warm. Taste and adjust seasonings (you may need to add a little salt, depending on the taco seasoning you use). Shred the chicken using two forks, then transfer the shredded chicken to the sauce. Toss to coat it in the sauce. If the sauce is too thick, add a little more hot water and allow to simmer for a few minutes. To build the nachos, layer the chips, cheese, and shredded chicken on a dish in several layers, ending with a small layer on top. Microwave the dish (or place it in a 350 degree oven if ovenproof) until the cheese is totally melted. Serve as is or add whatever extras you'd like! Dive into it immediately.

  • Preheat the oven to 375°. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix. Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.  Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir. Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.  Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips.  Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, grated cheese and/or, if you have it! (The garnishes really make the soup delicious.)
