Prep Time 40 minutes

Yield 60 cookies

Number Of Ingredients 9

1 cup sugar
1/2 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
2 teaspoons vanilla
2 (1-ounce) squares white baking bars, melted, cooled
1 2/3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 (1-ounce) square unsweetened baking chocolate, melted, cooled

Steps:

  • Combine sugar, butter, egg and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add cooled melted white baking bars; beat at low speed until well mixed. Add flour, baking powder and salt. Continue beating until well mixed.
  • Divide dough in half. Add cooled melted chocolate to one half; beat until well mixed. Shape each half of dough into 6x3-inch rectangle. Wrap each in plastic food wrap; refrigerate at least 1 hour or until firm.
  • Roll out white dough to 15x7-inch rectangle on lightly-floured waxed paper. Repeat with chocolate dough. Place chocolate dough on top of white dough. Roll up, jelly-roll style amp-custom, starting with 15-inch side. (For easier handling, roll can be cut in half.) Wrap roll in plastic food wrap; refrigerate at least 2 hours or until firm.
  • Heat oven to 375°F.
  • Cut rolls into 1/4-inch slices. Place 2 inches apart onto ungreased cookie sheets. Bake 7-9 minutes or until edges begin to brown.

  • Prepare Basic Cookie Dough. Divide in half; transfer half to another bowl. Stir chips, sugar, chocolate, and cocoa into half. Stir flour into plain dough. On sheet of waxed paper, roll chocolate dough into 14" by 10" rectangle. Repeat with plain dough. Turn over plain rectangle, still on waxed paper, and place, dough side down, on top of chocolate rectangle so that edges line up evenly. Peel off top sheet of waxed paper. If dough becomes too soft to work with, refrigerate 10 minutes. Starting from long side, tightly roll rectangles together, jelly-roll fashion, to form log, lifting bottom sheet of waxed paper to help roll. Cut log crosswise in half. Wrap each half with plastic wrap and freeze 2 hours or refrigerate overnight. Preheat oven to 350 degrees F. With sharp knife, cut 1 log (keep other log refrigerated) crosswise into 1/4-inch-thick slices. Place slices, 2 inches apart, on ungreased large cookie sheet. Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire racks to cool. Repeat with remaining log. Store cookies in tightly sealed container at room temperature up to 1 week or in freezer up to 3 months.Nutritional information is based on one cookie.
