1/2 cup unsalted butter, softened
1 package (8 oz) cream cheese, softened
1 teaspoon vanilla
3 cups powdered sugar, plus more as needed

Steps:

  • In large bowl, beat softened butter and cream cheese with electric mixer on medium speed 2 to 3 minutes, scraping bowl occasionally, until smooth and creamy.
  • Stir in vanilla, then stir in powdered sugar. Add more powdered sugar as needed until frosting is a thick spreadable consistency.
  • Spread or pipe frosting on cooled cake or cupcakes.

Pink Velvet Cake With Cream Cheese Frosting

Number Of Ingredients 15

2 ½ cups flour
1 ½ cups castor sugar
1 teaspoon bicarbonate of soda
Pinch salt
1 cup buttermilk
2 extra large eggs
1 ½ cups oil
1 tablespoon white vinegar
½ - 1 bottle pink liquid food coloring
1 tablespoon vanilla essence
250g butter
3 - 4 cups icing sugar
2 tablespoon milk
1 tub Lancewood cream cheese
1 teaspoon vanilla essence

Steps:

  • 1. Preheat oven to 180°C. 2. Mix flour, sugar and salt. 3. In another bowl combine buttermilk, eggs, oil, and coloring. Mix well. 4. Add into flour, mix well. 5. Combine vinegar and bicarb and pour over batter, briskly whisk in. 6. Spoon batter into two greased and lined round cake pans. 7. Bake for 35-45min, until skewered and cooked through in center. Allow to cool, then remove from pans and cool further. 8. Beat cream cheese until smooth. 9. Beat butter and sugar until fluffy, add all ingredients and form frosting. 10. Sandwich the two layers of cake with frosting and frost the top. Decorate with cake crumbs.
