Pineapple-Jalapeño Relish Recipe | Bon Appétit image

This pineapple-jalapeño relish, along with paprika honey mustard and Canadian bacon, helps make up the Hawaiian Dog.

Provided by Claire Saffitz

Yield Makes about 3 cups

Number Of Ingredients 5

1 small onion, sliced into ½-inch-thick rings
½ pineapple, peeled, sliced into ½-inch-thick planks
2 tablespoons vegetable oil
Kosher salt, freshly ground pepper
¼ cup chopped pickled jalapeños

Steps:

  • Prepare a grill for medium-high heat (or heat a dry large cast-iron skillet over medium-high). Toss onion and pineapple with oil to coat in a medium bowl; season with salt and pepper. Grill, turning once or twice, until charred, 5–8 minutes. Let cool. Coarsely chop and toss in another medium bowl with jalapeños; season with salt.

Number Of Ingredients 10

1 medium onion, chopped
2 tablespoons fresh ginger, finely minced
6 jalapeno peppers, finely chopped
1 teaspoon ground cumin
1/2 cup rum
1 fresh pineapple, diced
1/2 cup fresh lime juice
1/2 cup raw sugar (turbinado)
1/4 cup fresh cilantro, chopped
salt & freshly ground black pepper

Steps:

  • In saucepan over medium heat, sauté the onions, ginger, jalapenos, and cumin for 6 minutes.
  • Add the rum and cook until almost all is evaporated.
  • Add the pineapple, lime juice, and sugar, bring to simmer and then remove from heat.
  • Stir in the cilantro, salt and pepper to taste.
  • Note: Caution!
